    Instant Pot Steak Fajita Bowls - Whole 30

    Use your Instant Pot to make the most delicious and tender fajita steak and peppers! Then make perfect Paleo and Whole30 bowls loaded up with all the best toppings. This is sure to be a new favorite healthy weeknight staple in your home.

    What You Need:

    • Spice Mixture
      • Chili Powder
      • Salt
      • Cumin
      • Garlic Powder
      • Onion Powder
      • Coriander
    • Flank Steak (or sirloin steak)
    • Beef Broth
    • Tomato Paste
    • Red & Green Bell Peppers
    • Garlic
    • Jalapeno
    • Red Onion

    The best part about the Instant Pot is that you can sauté right in the pot. This is awesome because you don't have to get a separate pan dirty. Once the spice mixture is made it gets tossed with the thinly sliced steak and sautéed in the IP. Then all the remaining ingredients get added in and you cook for 7 minutes! It is really that easy. You get the most flavorful and tender steak and peppers to add to any meal.

    Tips for this Recipe:

    • Use flank steak or sirloin steak - most other cuts of beef will be too tough
    • It seems like a very short time, but it really does cook in 7 minutes. The IP cooks meat much faster and you don't want tough meat
    • The spice mixture isn't spicy, so omit the jalapeño in the recipe if you don't want any heat
    • There is some liquid left in the pot after it is done cooking, save that and store it with any leftover steak to keep it juicy and flavorful!

    Build Your Bowl:

    • To keep it Paleo & Whole30, serve over lettuce and cauliflower rice. I love to use my Cilantro Lime Cauliflower Rice as a base. If not doing a round of Whole30, I love to make my Instant Pot Cilantro Lime Rice
    • Add all your favorite Whole30 toppings!
      • Sliced red onion
      • Sliced jalapeno
      • Cilantro
      • Avocado
      • Tomato
      • Pico de Gallo
      • Guacamole

    Instant Pot Steak Fajita Bowls

    Ingredients
      

    For the Steak

    • 1 Tbls Avocado Oil
    • 1 Flank Steak or sirloin steak (1.5lbs)
    • 2 Tbls Chili Powder
    • 1.5 tsp Salt
    • 1 tsp Cumin
    • 1 tsp Garlic Powder
    • ½ tsp Onion Powder
    • ¼ tsp Coriander
    • 2 Green Bell Pepper sliced
    • 2 Red Bell Pepper sliced
    • ½ Jalapeno sliced
    • ½ cup Red Onion diced
    • 3 cloves Garlic minced
    • ½ cup Beef Broth
    • 2 Tbls Tomato Paste

    Instructions
     

    • Slice the steak into thin strips and add to a large bowl, then toss with the spice mixture
    • Turn Instant Pot to saute mode and add the oil
      Brown the steak for 1-2 minutes and then hit cancel
      Add in the rest of the ingredients (bell peppers, jalaepeno, red onion, garlic, beef broth and tomato paste) stir to combine
      Secure the lid and seal the steam valve. Set to high pressure cook for 7 minutes
    • Once timer goes off, carefully release the steam
      Serve the steak and veggies over cauliflower rice or lettuce and add desired toppings

      How long does it stay good for? Can i add regular tomato rather than the tomato paste? thanks!

      What did I do wrong? I had high hopes for this recipe but the meat was so tough I couldn't even chew through it and the bell peppers were complete mush. Especially frustrating as it meant I had to find quick replacement dinner plans as this was a complete flop (and not a cheap one at that given the price of the meat).

        I am sorry to hear this Melissa. I have cooked this many times and never had this experience. Maybe the meat wasn't sliced thin enough? I also know that some Instant Pots can come to pressure differently and cause different results.

      These Whole30 easy steak fajitas are best served up with a side of fried cauliflower rice or on top of a bed of zucchini noodles. In a small bowl, combine all of the marinade ingredients together using a whisk. Transfer the marinade to a gallon ziplock bag and add the flank steak.

          I have not made it with chicken and I test all of my recipes and cooking times for each protein very carefully, so I can't tell you what those times would be. I have a One Pan Chicken Fajita Skillet on the blog as well if you are interested in trying that out.

      This recipe was fantastic. So flavorful and tasty. My husband went back to the instant pot looking for seconds but there wasn’t any. I also served it with some sour cream I had in the fridge and an extra sprinkling of cilantro on top at the end.

        Are the nutrition facts for just the steak or steak and guacamole together? It's actually more carbs than I would've expected for this recipe.

          The nutrition facts do include both the steak and guacamole. There is also a lot of fiber, so if you do net carbs, it would be 10 per serving. Hope that helps!

      Are the sliced jalapeños and diced red onion to go into the pot with the steak to cook, or are they meant to be used as fresh toppings after cooking is done?

        There is both Jalapeño and red onion in with the steak and in the guacamole. It is listed under both ingredient and instruction sections. Hope that helps!
