Keto & Whole30 Taco Bake
This easy Keto and Whole30 taco bake is about to be your new favorite weeknight meal. It has all the flavors you love about tacos but in a casserole form. Top it with all the fresh toppings you can imagine for the perfect bite.

What You Need:
- Avocado Oil
- Ground Beef
- Onion
- Bell Pepper
- Garlic
- Tomato Paste
- Green Chiles
- Riced Cauliflower
- Eggs
- Spice Mixture
- Salt
- Garlic Powder
- Paprika
- Chili Powder
- Cumin
- Cayenne
- Topping Ideas
- Avocado
- Tomatoes
- Olives
- Red Onion
- Cilantro

Let’s Cook:
- Pre-heat oven to 350′ and grease a 2.5 quart baking dish* ( I use avocado oil spray)
- Add the salt, garlic powder, cumin, chili powder, paprika and cayenne into a small bowl and whisk to combine
- In a large skillet, heat the avocado oil over medium heat
- Add in the diced onion, garlic and bell pepper. Saute for 5 minutes, stirring occasionally
- Then add in the ground beef along with the spice mixture and tomato paste. Saute until meat is mostly cooked through
- Stir in the diced green chiles and cauliflower rice (fresh or frozen) into the meat mixture until fully combined
- Pour the mixture into the greased baking dish and top with the beaten eggs (mix a little to combine)
- Bake for 30 minutes then remove from oven and let cool. Serve with toppings and enjoy!

Yes, absolutely. This recipe would be great with ground turkey, chicken, or bison.
Does it reheat well?
Yes! This recipe is perfect for meal prep. I just keep the toppings separate, so I can reheat the taco bake and then add the toppings after.

- Diced Avocado

- Black Olives
- Diced Red Onion
- Fresh Cilantro

I think this would’ve been a big hit but my beef was very chewy in the casserole. I’m not sure why? I would like to try again – any tips on how to avoid the meat becoming chewy? The flavors were really good but I couldn’t eat much with the texture.

Very quick and easy
This is really good! I am all about bakes, casseroles, one pot etc. As soon as I saw this one- I had to try it. This was super easy to make and we all loved it. We ended up serving it bowl style with a little brown rice on the bottom of the bowl- alternatively could have use more cauli rice too. Topped with a fresh guacamole but anything would have been great! Both ways or alone would be yummy. I can’t wait to make this again!

This was delicious! I drained the beef and onion mixture before adding the spices and cauliflower. Does that make a huge difference In the end result?

This was a big hit with my family! I subbed the ground beef for ground turkey and it was fantastic!
I love how family friendly this is! The kids and husband ate this with tostadas and beans, but I earnestly couldn’t believe their compliments. I was thinking the dreaded “pickiness” would damper the meal, especially after hearing “is this white stuff onions?” I am telling no one it’s cauliflower rice! Topped with homemade guacamole and pico de Gallo – this meal comes together so quickly and could not be any simpler.
Made this for my family and loved it! Can I refrigerate it before putting it in the oven to pass to a friend to bake at a later time?

What is the purpose of the eggs? I have an egg allergy. Wondering if I should replace with flax eggs? Thank you!
The eggs help bind it together, you can omit, it just might be a little looser textured

We had this for dinner this week and thought it was great and super easy! We used ground turkey. I think the seasonings used really makes the dish. Can’t go wrong with the yummy toppings as well! We will definitely make this one again!
