What You Need:

Let’s Make Cauliflower Mash:

  1. The first thing that we will do is cut the head of cauliflower into florets and boil until fork tender.
  2. Once they are tender, drain the florets and place them in the food processor with butter, salt, pepper and 1/4 cup of the half & half (or Nutpods) and blend until smooth – adding remaining half & half until desired consistency is reached
  3. Taste for seasoning, adding more salt and pepper as needed.
  4. Pour in a serving dish, add a dollop of butter and top with fresh parsley (if using)

*If you do not have a food processor, you can use a regular potato masher or high powered blender

Optional Add-Ins:

  • Add in 1-2 TBLS of cream cheese for a thicker consistency and added tangy flavor
  • Top with shredded cheese, bacon and chives for a ‘loaded potato’ style side dish
  • Roast some garlic in the oven and add to the processor for creamy garlic cauliflower mash
