The Best Ever Cauliflower Mash

This Cauliflower Mash is so rich and creamy, you will love having it as a low carb side dish for any meal! It is gluten free and can be easily adapted to be both Paleo and Whole30 compliant. Serve it with the protein of your choice for a delicious and keto friendly meal.

What You Need:
- 1 Large Head of Cauliflower (or two small)
- Half & Half (or Original Flavor Nutpods for Paleo/Whole30)
- Salt & Pepper
- Butter (or ghee for Paleo/Whole30)
- Parsley (optional)
- Food Processor



Let’s Make Cauliflower Mash:
- The first thing that we will do is cut the head of cauliflower into florets and boil until fork tender.
- Once they are tender, drain the florets and place them in the food processor with butter, salt, pepper and 1/4 cup of the half & half (or Nutpods) and blend until smooth – adding remaining half & half until desired consistency is reached
- Taste for seasoning, adding more salt and pepper as needed.
- Pour in a serving dish, add a dollop of butter and top with fresh parsley (if using)

*If you do not have a food processor, you can use a regular potato masher or high powered blender
Optional Add-Ins:
- Add in 1-2 TBLS of cream cheese for a thicker consistency and added tangy flavor
- Top with shredded cheese, bacon and chives for a ‘loaded potato’ style side dish
- Roast some garlic in the oven and add to the processor for creamy garlic cauliflower mash

The Best Cauliflower Mash
This is the best ever cauliflower mash topped with melted ghee and fresh herbs. It is the perfect low carb side dish for any meal!
Ingredients
- 1 Large Head of Cauliflower or two small (cut into florets)
- 1/2 cup Half & Half Original Nutpods for Whole30
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 2 Tbls Butter Ghee for Whole30
- 2 Tbls Fresh Parsley for topping (optional)
Instructions
- Place the cauliflower florets in a medium saucepan and cover with waterAdd a little pinch of salt and boil until fork tenderDrain the cauliflower and place into a food processor
- Add the salt, pepper and butter into the food processor along with 1/4 cup of the half & half and start to blend Add in the remaining half & half until desired consistency is reached Taste for seasoning, add more salt and pepper as needed
- Top with more butter and fresh parsley
