Ingredients

  • 2 Heads of Cauliflower cut into florets
  • 1 cup Heavy Cream
  • 1 tsp Salt
  • 1/4 tsp Pepper
  • 4 Tbls Butter
  • 1 Tbls Fresh Parsley for topping (optional)

Instructions

  • Place the cauliflower florets in a pot and cover with water
Add a pinch of salt and boil until fork tender
Drain the cauliflower and place into a food processor*
  • Add the salt, pepper and butter into the food processor along with 1/4 cup of the heavy cream and start to blend
Add in the remaining half & half until desired consistency is reached
Taste for seasoning, add more salt and pepper as needed
  • Optional - top with melted butter and parsley

Notes

Recipe Notes
  • I get the smoothest cauliflower using the food processor, but if you don't have one, you could use a regular potato masher or high powered blender
  • The amount of liquid needed will vary based on the size of the cauliflower, so start with less and then you can always add more as needed
Optional Add-Ins
  • Add in 1-2 TBLS of cream cheese for a thicker consistency and added tangy flavor
  • Top with shredded cheese, bacon and chives for a 'loaded potato' style side dish
  • Roast some garlic in the oven and add to the processor for creamy garlic cauliflower mash
