Sweet Pepper Nachos with Cilantro Lime Greek Yogurt Sauce

These Sweet Pepper Nachos with Cilantro Lime Yogurt Sauce are the perfect healthy and delicious snack or meal! They are so easy to make and will satisfy those junk food cravings. Top them with all your favorites for the perfect bite.

What You Need:

  • Sweet Peppers
  • Ground Beef – or ground meat of choice
  • Avocado Oil
  • Taco Seasoning
  • Plain Greek Yogurt
  • Limes
  • Cilantro
  • Jalapeรฑos
  • Salt & Pepper

Let’s Make Pepper Nachos:

  1. Pre-heat the oven to 425′ and line a baking sheet with parchment paper
  2. Add the yogurt to a mixing bowl along with the lime zest, lime juice, cilantro and sea salt. Let sit in the fridge while you are prepping the nachos
  3. Wash and dry your sweet peppers and slice them in half lengthwise. Pull out the ribs and seeds
  4. Place the peppers on the baking sheet and spray with avocado oil. Sprinkle with salt and pepper and bake for 10 minutes. This is just to soften the peppers slightly, but you still want them to have some bite to them
  5. While the peppers are baking, heat the oil in a skillet over medium heat on the stovetop and cook your ground beef with 2-3 Tbls of taco seasoning until completely cooked through
  6. When the peppers are done, top with the ground beef, cilantro, jalapeรฑos and sliced limes
  7. Serve the sauce on the side for dipping!

Recipe Tips:

  • Top with some cheese and melt under the broiler if your heart desires
  • Add fresh Pico de Gallo
  • Feel free to use ground chicken, turkey or bison

Ingredients

  • 16 oz Sweet Peppers
  • Avocado Oil Spray
