Greek Chicken Protein Pasta Salad
When the weather gets warmer I always start to crave bright, fresh flavors. This Greek inspired pasta salad is so yummy and packed with protein. You will love having this meal on hand all spring and summer long.

I use Barilla protein pasta to get an added boost of macro-friendly protein to this delicious dish. You can use your pasta of choice – chickpea pasta would also be a great option. Store-bought grilled chicken helps keep this pasta salad super quick to throw together. I love to get mine from Costco, but any grilled chicken (or rotisserie chicken) would be perfect.

Tomatoes, cucumber and bell peppers add so much fresh flavor and texture. Chives give that onion flavor without being too overpowering. The feta adds the perfect salty bite and the Greek dressing brings it all together. I used Primal Kitchen Greek dressing for a healthier, sugar free option. If you can’t find greek dressing, my homemade Italian dressing would be a great option as well.

Greek Chicken Protein Pasta
Ingredients
- 16 oz Protein Pasta I use Barilla
- 2 cups Grilled Chicken chopped
- 8 oz Feta Cheese cubed
- 1 Yellow Bell Pepper diced
- 1 pint Grape Tomatoes halved
- 1 English Cucumber chopped
- 3 Tbls Chives chopped
- 1 cup Greek Dressing* I use Primal Kitchen
- Salt & Pepper
Instructions
- Cook pasta according to the package and drain – let cool
- Add the tomatoes, cucumber, bell pepper, chicken, feta cheese and dressing to the cooked and cooled pasta in a large bowl
- Toss with chives and salt and pepper to taste
- Serve and enjoy!
Notes
- can use pasta of choice
- if you can’t find Greek dressing, Italian dressing would also be great with this dish
- you can add more dressing to your preference
