What You Need

  • Coconut Milk – full fat
  • Plain Greek Yogurt – unsweetened, this adds a great boost of protein and makes it super creamy
  • Chia Seeds
  • Maple Syrup – or liquid sweetener of choice
  • Frozen Strawberries

Recipe Notes

  • You can swap out the full fat coconut milk for lite or for almond milk but it will not be as thick
  • I only use a small amount of maple syrup in this recipe, because I love the sweetness of the strawberries to shine, but you can add more if you like it sweeter. You can also use a sugar free liquid sweetener as well
  • I like to use frozen strawberries because they are sweet and add some liquid when they are cooked to help make the sauce

Ingredients
  

Coconut Chia Pudding

  • 1 can Full Fat Coconut Milk 13.5oz
  • 1/2 cup Plain Greek Yogurt unsweetened
  • 2 Tbls Maple Syrup
  • 6 Tbls Chia Seeds

Strawberry Sauce

  • 2 cups Frozen Strawberries
  • 2 Tbls Water
  • 2 Tbls Maple Syrup
  • 2 Tbls Chia Seeds

Instructions
 

Coconut Chia Pudding

  • Add the coconut milk, greek yogurt, maple syrup and chia seeds into a bowl and whisk until combined
    Put in an airtight container and let set at least an hour. I like to leave it overnight for the best consistency

Strawberry Sauce

  • Add the strawberries to a small saucepan with the water and turn heat to medium/low
    Cook for 5 minutes, gently stirring the mixture to help the strawberries break down
    Stir in the maple syrup and cook for another 5 minutes, smash the strawberries a little bit and remove from heat
  • Once cool, add to an airtight container and stir in the chia seeds. Store in the fridge
    Serve over the coconut chia pudding and enjoy!

Notes

Serving size is approximately 1/2 cup of the chia pudding
