Why You Will Love this Recipe
This Coconut Chia Pudding is such a great recipe to prep ahead for the week. It is packed with fiber, protein and healthy fats to start your day off right. It is very easy to make and only requires a few simple ingredients. Not to mention, it is so creamy and so delicious! You are going to love having this recipe on hand for those busy weeks.

What You Need
- Coconut Milk – full fat
- Plain Greek Yogurt – unsweetened, this adds a great boost of protein and makes it super creamy
- Chia Seeds
- Maple Syrup – or liquid sweetener of choice
- Frozen Strawberries

Recipe Notes
- You can swap out the full fat coconut milk for lite or for almond milk but it will not be as thick
- I only use a small amount of maple syrup in this recipe, because I love the sweetness of the strawberries to shine, but you can add more if you like it sweeter. You can also use a sugar free liquid sweetener as well
- I like to use frozen strawberries because they are sweet and add some liquid when they are cooked to help make the sauce
- You can store both the chia seed pudding and strawberry sauce in airtight containers in the fridge for up to 5 days. Shop my cute strawberry jar HERE
