These Whole30 + Keto Baked Chicken Thighs are so easy to make and so delicious! They are the perfect healthy protein to serve with any side dish. Your family will love the tender, juicy chicken with the best crispy skin!

Our family loves these chicken thighs. I make them 2-3 times a month. They are so easy, so full of flavor and can be served with many different sides.

What You Need

Let’s Bake Chicken

  1. Preheat the oven to 400′
  2. Trim any excess skin off of the chicken and pat dry with a paper towel
  3. Add the chicken to a bowl with the oil and seasoning, toss to coat (I use my sugar-free chicken spice rub)
  4. Place the chicken on the rack over the baking sheet (skin side up) and bake for 45-60 minutes (time depends on the size of the thighs – internal temp should be 165’F)
  5. Once chicken is cooked through, brush with juices from the pan and enjoy!

Ingredients
  

  • 6 Chicken Thighs Bone-in, Skin-on
  • 2 Tbls Avocado Oil
  • 3 Tbls Chicken Spice Rub

Instructions
 

  • Preheat the oven to 400'
  • Trim any excess skin off of the chicken and pat dry with a paper towel
    Add the chicken to a bowl with the oil and seasoning, toss to coat (I use my sugar-free chicken spice rub)
    Place the chicken on the rack over the baking sheet (skin side up) – sprinkle extra seasoning on top if needs it
    Bake for 45-60 minutes (time depends on the size of the thighs – internal temp should be 165'F)

    These were the best chicken thighs I’ve ever made. I almost didn’t make them when I realized my thighs (from a local farmer) were skinless and boneless. Oh no! I proceeded anyway, and they were still amazing, so tender, delicious, with the sauce blending into my cauliflower rice.
