The Best Gluten Free Monster Cookies

These Gluten Free Monster Cookies are the perfect giant, chewy cookies that your family will devour. Oats, peanut butter, chocolate chips and chocolate candies – these cookies are absolutely loaded with all your favorite things but are gluten free!

What You Need:

Let’s Make Monster Cookies:

  1. Pre-heat oven to 350’F and line two large baking sheets with parchment paper
  2. In a large mixing bowl, add the flour, oats, baking soda, baking powder, and salt. Whisk to combine
  3. In a separate mixing bowl, add the brown sugar, granulated sugar and softened butter. Beat with an electric mixer until it is light and creamy (2-3 minutes)
  4. Add the room temperature eggs, vanilla extract and peanut butter to the sugar/butter mixture and beat again until smooth and creamy (may have to pause and scrape the bowl with a rubber spatula)
  5. Mix in the flour/oat mixture to the wet ingredients. Stir to combine completely and then stir in the candy coated chocolates and chocolate chips
  6. Scoop out the dough with a 1/4 cup measuring cup and roll into balls (these are big ol’ monster cookies) and place onto the lined baking sheet. Make sure you leave plenty of room for them to spread out
  7. Bake for 17-20 minutes (can vary depending on altitude)
  8. Once done, remove from oven and let cool on a cooling rack. You can gently press more candies in the top while they are still warm for a nicer presentation

Recipe Notes:

  • I buy all my gluten free products from Thrive Market – it is more affordable and you can search by dietary needs. Plus it gets delivered to your front door!
  • You cannot sub almond flour or coconut flour for the gluten-free 1 to 1 flour. They do not work in this recipe.
  • Make sure you set out the butter and eggs before you bake – you want them to be room temp. It really helps with the texture of the cookies.

Ingredients
  

  • 2 cups Gluten Free Flour Bob's Red Mill 1 to 1
  • 2 cups Gluten Free Oats
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 3/4 cup Brown Sugar
  • 3/4 cup Granulated Sugar
  • 1 cup Butter softened; unsalted
  • 2 tsp Vanilla Extract
  • 2 Eggs large; room temp
  • 1 cup Peanut Butter creamy
  • 1 cup Candy Coated Chocolates Unreal
  • 1 cup Mini Semi-Sweet Chocolate Chips Enjoy Life
