What You Need:

Let’s Make Cereal Bars:

  1. Cut a piece of parchment paper to fit an 8×8 square pan, this will help you be able to lift the bars easily out of the pan
  2. Pour the cereal into a large bowl
  3. Add the peanut butter and honey to a glass measuring cup or microwave safe bowl and microwave for 30 seconds – peanut butter should be melty and it should be easy to stir. Microwave for an additional 10 seconds at a time until you get this consistency
  4. Pour over the cereal and use a rubber spatula to gently stir the cereal and peanut butter/honey mixture together. Do this until cereal is full coated
  5. Spread the cereal mixture into your parchment lined pan and press down into an even layer. Let sit in the fridge for 20-30 minutes
  6. Add the chocolate and coconut oil to a glass measuring cup or microwave safe bowl and heat in the microwave for 15 seconds at a time – stir each time. Do this until chocolate is just melted and pourable. Pour over the cooled cereal mixture and let cool in the fridge again for another 20 minutes
  7. Top with sea salt if desired, cut into bars and enjoy! Store in an airtight container in the fridge for up 5 days
