Gluten Free Chocolate Peanut Butter Cereal Bars

These Gluten Free Chocolate Peanut Butter Cereal Bars are a delicious and easy treat. Your kids will love to get in the kitchen and help make these fun gluten and dairy free bars! They are a great way to enjoy your favorite flavor combo but with better-for-you ingredients.

What You Need:
- Honey Nut Cheerios
- Creamy Peanut Butter – can use SunButter if you need a nut-free alternative
- Honey – could also use maple syrup
- Gluten & Dairy Free Semi-Sweet Chocolate Chips – we use Enjoy Life
- Coconut Oil
- Sea Salt Flakes

Let’s Make Cereal Bars:
- Cut a piece of parchment paper to fit an 8×8 square pan, this will help you be able to lift the bars easily out of the pan
- Pour the cereal into a large bowl
- Add the peanut butter and honey to a glass measuring cup or microwave safe bowl and microwave for 30 seconds – peanut butter should be melty and it should be easy to stir. Microwave for an additional 10 seconds at a time until you get this consistency
- Pour over the cereal and use a rubber spatula to gently stir the cereal and peanut butter/honey mixture together. Do this until cereal is full coated
- Spread the cereal mixture into your parchment lined pan and press down into an even layer. Let sit in the fridge for 20-30 minutes
- Add the chocolate and coconut oil to a glass measuring cup or microwave safe bowl and heat in the microwave for 15 seconds at a time – stir each time. Do this until chocolate is just melted and pourable. Pour over the cooled cereal mixture and let cool in the fridge again for another 20 minutes
- Top with sea salt if desired, cut into bars and enjoy! Store in an airtight container in the fridge for up 5 days
