Pre-heat oven to 350'F and line two large baking sheets with parchment paper
In a large mixing bowl, add the flour, oats, baking soda, baking powder, and salt. Whisk to combine
In a separate mixing bowl, add the brown sugar, granulated sugar and softened butter. Beat with an electric mixer until it is light and creamy (2-3 minutes) Add the room temperature eggs, vanilla extract and peanut butter to the sugar/butter mixture and beat again until smooth and creamy (may have to pause and scrape the bowl with a rubber spatula)
Scoop out the dough with a 1/4 cup measuring cup and roll into balls (these are big ol' monster cookies) and place onto the lined baking sheet. Make sure you leave plenty of room for them to spread out
Bake for 17-20 minutes (can vary depending on altitude) Once done, remove from oven and let cool on a cooling rack. You can gently press more candies in the top while they are still warm for a nicer presentation
