What You Need

  • Kielbasa – this is our preference for this dish, it adds such a nice smoky flavor but you can also use your favorite sausage (chicken apple sausage would be nice too)
  • Brussels Sprouts
  • Sweet Potato
  • Red Onion
  • Salt, Pepper & Garlic Powder
  • Avocado Oil – my oil of choice for roasting or cooking at higher temperatures because it has a higher smoke point
  • Spicy Brown Mustard
  • Maple Syrup
  • Coconut Aminos – this is a savory sauce that is similar in flavor to soy sauce (but a little sweeter) and it adds a nice rounded out flavor to the maple mustard sauce

Recipe Tips

  • Don’t overcrowd your baking sheet, it will keep the veggies from roasting properly. They will steam and not get that beautiful caramelization that we all love. Use a bigger sheet pan or two if you need to.
  • Use your hands to massage the oil and seasoning onto the sausage and veggies, this helps make sure that it is evenly coated.
  • Feel free to switch out the type of sausage you use or even the veggies. Use what you have in the fridge!
  • Store completely cooled leftovers in an airtight container in the fridge for up to 4 days. Store the sauce separately.

Ingredients
  

Sausage and Veggies Sheet Pan Meal

  • 14 oz Kielbasa sliced
  • 1 lb Brussels Sprouts halved; bottoms cut and outer peels removed
  • 1 Sweet Potato large; peeled and cubed
  • 1 Red Onion large; cut into chunks
  • 2 Tbls Avocado Oil
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 tsp Garlic Powder

Maple Mustard Sauce

  • 1/4 cup Spicy Brown Mustard
  • 1 Tbls Coconut Aminos
  • 2 Tbls Maple Syrup

Instructions
 

  • Preheat the oven to 425 degrees and line a baking sheet with parchment paper or a silicone liner
    Add the sliced kielbasa, halved Brussels sprouts, cubed sweet potatoes, and chopped red onion
    Top with the avocado oil, salt, pepper, and garlic powder. Use hands to toss it all together and coat the sausage and veggies thoroughly
  • Bake for 10 minutes, toss and then bake another 10 minutes
    If the veggies need a little more color, you can broil on high for a 2-3 minutes. Just keep an eye on it, so it doesn't burn
  • While the sheet pan meal is baking, add the spicy brown mustard, coconut aminos and maple syrup to a small bowl. Whisk to combine and set aside
  • Serve up the sausage and veggies on a plate with sauce on the side, enjoy!

    I am a big fan of easy, sheet pan meals and this one is so elevated. The sauce is the best part, and my whole family loved it, including my toddler. I followed her exact directions for cooking it and did the broil for a few minutes at the end and it turned out great.
