Sausage and Veggie Sheet Pan Meal with Maple Mustard Sauce

Smoky sausage with perfectly roasted veggies come together seamlessly in this easy sheet pan meal. And the maple mustard sauce is the perfect condiment for this delicious weeknight dinner.

Ingredients

Sausage and Veggies Sheet Pan Meal

  • 14 oz Kielbasa sliced
  • 1 lb Brussels Sprouts halved; bottoms cut and outer peels removed
  • 1 Sweet Potato large; peeled and cubed
  • 1 Red Onion large; cut into chunks
  • 2 Tbls Avocado Oil
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 tsp Garlic Powder

Maple Mustard Sauce

Instructions

  • Preheat the oven to 425 degrees and line a baking sheet with parchment paper or a silicone liner
    Add the sliced kielbasa, halved Brussels sprouts, cubed sweet potatoes, and chopped red onion
    Top with the avocado oil, salt, pepper, and garlic powder. Use hands to toss it all together and coat the sausage and veggies thoroughly
  • Bake for 10 minutes, toss and then bake another 10 minutes
    If the veggies need a little more color, you can broil on high for a 2-3 minutes. Just keep an eye on it, so it doesn't burn
  • While the sheet pan meal is baking, add the spicy brown mustard, coconut aminos and maple syrup to a small bowl. Whisk to combine and set aside
  • Serve up the sausage and veggies on a plate with sauce on the side, enjoy!

Notes

  • Don't overcrowd your baking sheet, it will keep the veggies from roasting properly. They will steam and not get that beautiful caramelization that we all love. Use a bigger sheet pan or two if you need to
  • Feel free to switch out the type of sausage you use or even the veggies. Use what you have in the fridge!
  • Store completely cooled leftovers in an airtight container in the fridge for up to 4 days. Store the sauce separately.
