14ozKielbasasliced
1lbBrussels Sproutshalved; bottoms cut and outer peels removed
Preheat the oven to 425 degrees and line a baking sheet with parchment paper or a silicone linerAdd the sliced kielbasa, halved Brussels sprouts, cubed sweet potatoes, and chopped red onion Top with the avocado oil, salt, pepper, and garlic powder. Use hands to toss it all together and coat the sausage and veggies thoroughly
Bake for 10 minutes, toss and then bake another 10 minutesIf the veggies need a little more color, you can broil on high for a 2-3 minutes. Just keep an eye on it, so it doesn't burn
While the sheet pan meal is baking, add the spicy brown mustard, coconut aminos and maple syrup to a small bowl. Whisk to combine and set aside
Serve up the sausage and veggies on a plate with sauce on the side, enjoy!
Notes
Don't overcrowd your baking sheet, it will keep the veggies from roasting properly. They will steam and not get that beautiful caramelization that we all love. Use a bigger sheet pan or two if you need to
Feel free to switch out the type of sausage you use or even the veggies. Use what you have in the fridge!
Store completely cooled leftovers in an airtight container in the fridge for up to 4 days. Store the sauce separately.
