One Pot Taco Pasta

This One Pot Taco Pasta has all those taco flavors we love but loaded into an incredible pasta dish. This meal comes together in one pot making it perfect for those busy weeknights. It is is packed with protein and fiber, your kids won’t even notice the hidden veggies because it tastes so good!

This dish is a flavor packed meal that also has protein and hidden veggies in it! The best part, is that it comes together in one pot, even the pasta. You get to enjoy your favorite taco Tuesday flavors but in a fun and different way. My whole family loved this dish and I feel good about them eating it.

What You Need

  • Olive Oil – or avocado oil
  • Ground Beef – you could also use ground turkey
  • Rotini Pasta – or pasta shape of choice
  • Red Onion
  • Garlic
  • Bell Pepper
  • Taco Seasoning Packet – our favorite is Siete, so much flavor and quality ingredients
  • Black Beans
  • Zucchini
  • Diced Tomatoes
  • Diced Green Chiles
  • Chicken Broth
  • Cheddar Cheese – I like to buy a block and shred it myself

Recipe Notes

  • I have not tried this recipe with gluten free pasta, but if you use one, I would recommend using a brown rice based pasta. It is a sturdier pasta that will not fall apart like some of the chickpea ones do. Jovial is my favorite GF pasta brand
  • You can absolutely swap out the ground beef with ground turkey for a leaner option

Ingredients
  

  • 1 tsp Olive Oil or avocado oil
  • 1 cup Red Onion diced (about 1 medium onion)
  • 1 cup Yellow Bell Pepper diced (about 1 bell pepper)
  • 1.5 cups Zucchini diced (about 1 medium zucchini)
  • 3 cloves Garlic minced
  • 1 lb Ground Beef or ground turkey
  • 1 packet Taco Seasoning I use Siete
  • 14.5 oz Can of Diced Tomatoes
  • 14.5 oz Can of Black Beans rinsed and drained
  • 4 oz Can of Green Chiles mild
  • 2.5 cups Low Sodium Chicken Broth
  • 16 oz Rotini Pasta
  • 1 cup Shredded Cheddar Cheese

Instructions
 

  • Add the olive oil to a large pan over medium heat
    Add in the diced onion and diced bell pepper, sauté for 3 minutes
    Then add in the diced zucchini and minced garlic and sauté an additional 2 minutes
  • Next, add in the ground beef and use your spoon or spatula to break it up
    Cook the beef until mostly cooked and browned through, then stir in the taco seasoning packet, diced tomatoes, drained black beans, green chiles and chicken broth
    Bring to a gentle boil and stir in the pasta, cover with lid and cook for 8-10 minutes (stirring occasionally)
  • Pasta should be cooked but still have a little chew to it and most of the liquid in the pan should be gone
    Remove from heat and stir in the shredded cheddar cheese
    Top with your favorite toppings and enjoy!
