Why You Will Love this Recipe
This dish is a flavor packed meal that also has protein and hidden veggies in it! The best part, is that it comes together in one pot, even the pasta. You get to enjoy your favorite taco Tuesday flavors but in a fun and different way. My whole family loved this dish and I feel good about them eating it.

What You Need
- Olive Oil – or avocado oil
- Ground Beef – you could also use ground turkey
- Rotini Pasta – or pasta shape of choice
- Red Onion
- Garlic
- Bell Pepper
- Taco Seasoning Packet – our favorite is Siete, so much flavor and quality ingredients
- Black Beans
- Zucchini
- Diced Tomatoes
- Diced Green Chiles
- Chicken Broth
- Cheddar Cheese – I like to buy a block and shred it myself

Recipe Notes
- I have not tried this recipe with gluten free pasta, but if you use one, I would recommend using a brown rice based pasta. It is a sturdier pasta that will not fall apart like some of the chickpea ones do. Jovial is my favorite GF pasta brand
- You can absolutely swap out the ground beef with ground turkey for a leaner option
- Use your favorite toppings for this dish, we love…
- Fresh Cilantro
- Sliced Jalapeños
- Diced Red Onion
- Diced Tomatoes
- Extra Cheese
- Sour Cream
