This Turkey Taco Skillet has all the flavors you love from taco night but in a healthy, one pan dish! It is really easy to make and can be loaded up with all your favorite toppings. You can feel free to swap out the protein or veggies based on what your family enjoys.

What You Need

  • Ground Turkey – we love this lean protein option in our family, but this recipe is just as delicious with ground beef or ground chicken
  • Taco Seasoning – I love to make my own homemade taco seasoning, but if I don’t have the time, Siete is my favorite store bought brand
  • Sweet Potato – adding a starch to this dish makes it more of a complete meal and I love the added flavor it brings
  • Black Beans
  • Corn
  • Red Onion
  • Garlic
  • Diced Tomatoes
  • Diced Green Chiles – we use mild
  • Monterey Jack Cheese – I love this mild, melty cheese for this meal but you can use whatever cheese your heart desires
  • Jalapeño – we love spice in our family, but feel free to omit
  • Cilantro

Ingredients
  

  • 2 Tbls Avocado Oil
  • 1 lb Ground Turkey
  • 2.5 Tbls Taco Seasoning* homemade or packet of your favorite seasoning
  • 1 Sweet Potato peeled and diced
  • 1/2 cup Red Onion diced
  • 2 Garlic Cloves minced
  • 1 Jalapeno diced
  • 4.5 oz Can of Diced Green Chiles mild
  • 14.5 oz Can of Diced Tomatoes
  • 15 oz Can of Corn Kernels drained
  • 15 oz Can of Black Beans drained
  • 1 cup Shredded Monterey Jack Cheese

Instructions
 

  • Heat 1 Tbls of the avocado oil in a large skillet over medium/high heat
    Add in the ground turkey and 1 Tbls of the taco seasoning
    Sauté until the turkey is completely cooked (about 5-7 minutes) and remove from the pan
  • Pour in the remaining avocado oil and add in the diced sweet potato, cook for 3-4 minutes
    Then add in the red onion, jalapeño ,garlic, black beans, corn, green chiles, diced tomatoes and taco seasoning
    Let cook/simmer for another 5-7 minutes or until the sweet potato is just fork tender
  • Stir in the cooked ground turkey and taste for seasoning – add salt to taste
    Top with cheese, cover with a lid to let the cheese melt and remove from heat
  • Top with your favorite toppings and enjoy!
