2TblsAvocado Oil
1lbGround Turkey
2.5TblsTaco Seasoning*homemade or packet of your favorite seasoning
1Sweet Potatopeeled and diced
1/2cupRed Oniondiced
2Garlic Clovesminced
1Jalapenodiced
4.5ozCan of Diced Green Chilesmild
14.5ozCan of Diced Tomatoes
15ozCan of Corn Kernels drained
15ozCan of Black Beansdrained
1cupShredded Monterey Jack Cheese
Instructions
Heat 1 Tbls of the avocado oil in a large skillet over medium/high heat Add in the ground turkey and 1 Tbls of the taco seasoningSauté until the turkey is completely cooked (about 5-7 minutes) and remove from the pan
Pour in the remaining avocado oil and add in the diced sweet potato, cook for 3-4 minutesThen add in the red onion, jalapeño ,garlic, black beans, corn, green chiles, diced tomatoes and taco seasoningLet cook/simmer for another 5-7 minutes or until the sweet potato is just fork tender
Stir in the cooked ground turkey and taste for seasoning - add salt to tasteTop with cheese, cover with a lid to let the cheese melt and remove from heat
