This Chocolate Chip Pumpkin Muffin recipe is easy to make and it is so yummy! Made with healthier ingredients, it is a fall treat that you can feel good about. I kept these muffins lower in carbs and used sugar free sweetener. You will love having these on hand for a quick breakfast or sweet treat throughout the week. What You Need

  • Almond Flour – this is a great option to make these lower carb and also gluten free
  • Baking Soda
  • Baking Powder
  • Unflavored Protein Powder – I used my favorite Genepro protein, you could also use unflavored collagen powder
  • Pumpkin Pie Spice – my favorite blend is from Primal Palate, I love all of their organic spices
  • Cinnamon
  • Pumpkin Puree – this is just plain pumpkin not pumpkin pie filling
  • Vanilla Extract
  • Sugar Free Granulated SweetenerSwerve is my favorite brand and I have found it in all my local grocery stores and on Amazon
  • Egg
  • Coconut Oil
  • Sugar Free Chocolate Chips – Lilys are my favorite sugar free chocolate chips, so good!

Recipe Notes

  • You cannot replace the almond flour with another baking flour, they do not bake the same so I recommend sticking to the recipe
  • I used unflavored protein powder to add a boost of protein to these, but you can leave it out or replace with unflavored collagen powder
  • I mentioned this above but be sure to grab pumpkin puree and not pumpkin pie filling

Ingredients
  

  • 2 cups Almond Flour
  • 1 tsp Baking Soda
  • 2 tsp Baking Powder
  • 2 scoops Unflavored Protein Powder I use Genepro
  • 2 tsp Pumpkin Pie Spice
  • 1/2 tsp Ground Cinnamon
  • 1 tsp Vanilla Extract
  • 1 cup Pumpkin Puree
  • 1/2 cup Sugar Free Granulated Sweetener I use Swerve
  • 1 Egg
  • 2 Tbls Coconut Oil melted
  • 1/2 cup Sugar Free Chocolate Chips I use Lilys

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit and line your muffin tin with muffin liners
  • In a large bowl add your almond flour, baking soda, baking powder, protein powder, pumpkin pie spice, and cinnamon. Use a whisk to combine the dry ingredients together
  • In a separate bowl add the pumpkin puree, vanilla extract, sweetener, egg, and melted coconut oil. Whisk together to fully combine
  • Add the dry ingredients into the pumpkin mixture and stir to combine. Stir in the chocolate chips
  • Fill the muffin liners with the mixture until mostly full. I like to use an ice cream scoop to make them rounded on the top, these muffins don't rise much on their own
  • Bake for 20 minutes, a knife should come out clean
    Let cool completely and enjoy!
