Healthy Paleo Granola – Gluten Free

This healthy Paleo granola is the perfect sweet & salty snack. It is gluten free and made with clean ingredients that you can feel good about. Serve it over yogurt, in a smoothie bowl or even as cereal with some almond milk. The whole family will love this delicious treat!

What You Need:

  • Sliced Almonds
  • Pecan Pieces
  • Shredded Coconut – can also use flaked coconut
  • Pumpkin Seeds – can also use sunflower seeds
  • Honey – can use maple syrup or agave to keep it vegan
  • Cinnamon
  • Nutmeg
  • Sea Salt
  • Vanilla Extract
  • Coconut Oil

Let’s Make Paleo Granola:

  1. Preheat your oven to 300’F and line a large baking sheet with parchment paper or a silicone baking mat
  2. Melt the coconut oil in the microwave for 15-20 seconds
  3. Add all of the ingredients to a large mixing bowl and stir with a rubber spatula to combine
  4. Spread the mixture out on the lined baking sheet and bake for 15 minutes, use spatula to toss the mixture
  5. Bake another 12-15 minutes. It should be golden brown. (ovens can vary in temp, so keep an eye on it to prevent burning)
  6. Remove from oven and let mixture cool to harden. Break into chunks and store in an airtight container

Recipe Tips:

  • I love to buy my organic nuts and seeds from Thrive Market, this is the most affordable option I have found
  • Change up the nuts and seeds to your preferences
  • Add a variety of spices and seasonings to change it up! Pumpkin spice is delicious in this recipe
  • Serve with yogurt, as a topping for smoothies, or as cereal with berries and milk
  • Store in an airtight container for 1-2 weeks
