Healthy Paleo Granola – Gluten Free

This healthy Paleo granola is the perfect sweet & salty snack. It is gluten free and made with clean ingredients that you can feel good about. Serve it over yogurt, in a smoothie bowl or even as cereal with some almond milk. The whole family will love this delicious treat!

What You Need:
- Sliced Almonds
- Pecan Pieces
- Shredded Coconut – can also use flaked coconut
- Pumpkin Seeds – can also use sunflower seeds
- Honey – can use maple syrup or agave to keep it vegan
- Cinnamon
- Nutmeg
- Sea Salt
- Vanilla Extract
- Coconut Oil

Let’s Make Paleo Granola:
- Preheat your oven to 300’F and line a large baking sheet with parchment paper or a silicone baking mat
- Melt the coconut oil in the microwave for 15-20 seconds
- Add all of the ingredients to a large mixing bowl and stir with a rubber spatula to combine
- Spread the mixture out on the lined baking sheet and bake for 15 minutes, use spatula to toss the mixture
- Bake another 12-15 minutes. It should be golden brown. (ovens can vary in temp, so keep an eye on it to prevent burning)
- Remove from oven and let mixture cool to harden. Break into chunks and store in an airtight container
