Turkey Bacon, White Cheddar and Spinach Egg Bites
These Turkey Bacon, White Cheddar and Spinach Egg Bites are the perfect low carb, high protein breakfast. Prep them for the week ahead so you have a quick and healthy breakfast ready to go! With crispy bacon, creamy cheese and tender eggs – you have a lovely and tasty meal to start your day.

These egg bites are such a great meal prep option too, I love being able to heat one up when I need a quick meal. As a work from home mom with a very active toddler, quick and nutritious breakfasts are a must.

What You Need:
- Eggs – I use fresh eggs from our hens; a true dream come true for me, I will never not be excited about it 🙂
- Milk – I used whole milk to help makes these as creamy and tender as possible. You can use your milk of choice
- Turkey Bacon – you can use regular bacon as well
- White Cheddar Cheese – I buy the block and shred it myself, it melts the best this way
- Fresh Spinach – for nutrition, flavor and color!
- Salt & Pepper
- Avocado Oil Spray

I love creating recipes that you can easily customize to your preferences and still have a delicious outcome. Here are a few tips/ideas for this recipe….
- I used whole milk for added flavor and creaminess, you can lower the fat content by using a skim milk or your preference. It will still be super yummy!
- I used turkey bacon but you can use regular bacon or even chopped Canadian bacon
- The white cheddar has great sharp flavor and creaminess, but feel free to switch it up with your favorite cheese (mozzarella will lower the fat)
- Make sure to cook these turkey bacon egg bites until just set for the best texture
- To prevent sticking I love to use these silicone muffin liners
- Store in an airtight container for up to 5 days
- Re-heat in the microwave for 45 – 60 seconds

Turkey Bacon, White Cheddar and Spinach Egg Bites
Ingredients
- 8 Eggs large
- 1/2 cup Whole Milk or milk of choice
- 1 tsp Salt
- 1/4 tsp Pepper
- 1 lb Turkey Bacon
- 1 cup Spinach chopped
- 3/4 cup White Cheddar Cheese shredded
- Avocado Oil Spray
Instructions
- Preheat the oven to 350'F and line your muffin tin with silicone liners and spray with avocado oil spray
- Heat a skillet over medium heat and spray with avocado oil sprayCut the turkey bacon into bite sized pieces and cook in the skillet until crisped and cooked through, then set aside
- Add your eggs, milk, salt and pepper to a mixing bowl and whisk until smooth and fully combined
- Place 1 Tbls of the cooked turkey bacon and 1 Tbls of the shredded cheese in the bottom of each tin along with about 1 Tbls of the chopped spinach
- Pour the egg mixture into each tin about 3/4 of the way full
- Add a little more cheese and turkey bacon to the top and bake for 18-20 minutes, until the center is just set Let cool and enjoy or store in the fridge in an airtight container for up to 5 days
