What You Need

  • Ground Turkey – can also use ground chicken
  • Fresh Green Beans
  • Avocado Oil – can also use olive oil
  • Coconut Aminos – soy sauce alternative (can also use low sodium soy sauce)
  • Chili Garlic Paste/Sauce – this can be found in a small jar in the Asian section of most grocery stores, if you can’t find it, use your favorite Asian hot sauce (like sriracha)
  • Rice Wine Vinegar
  • Fresh Garlic
  • Fresh Ginger
  • Arrowroot Starch – this is used to thicken the sauce, you can also use cornstarch but it is higher in carbs
  • Honey – optional

Recipe Notes

  • We like to serve this stir fry over cauliflower rice to pump up the veggies and keep it lower carb but you could also serve it over rice or your preferred grain
  • A small amount of honey is used to balance out the salt and spice, but you can omit or use a liquid sweetener of choice
  • Leftovers can be stored in an airtight container in the fridge for up to 5 days – it is a great meal prep option
  • If you cannot find the chili garlic sauce, you can use your favorite Asian hot sauce, like sriracha

Ingredients
  

  • 2 tsp Avocado Oil or olive oil
  • 1 lb Ground Turkey or ground chicken
  • 1/2 tsp Salt
  • 12 oz Fresh Green Beans trimmed and halved
  • 1/3 cup Coconut Aminos
  • 2 tsp Rice Wine Vinegar
  • 2 Tbls Chili Garlic Sauce
  • 2 Garlic Cloves minced
  • 1 Tbls Fresh Ginger grated
  • 1 tsp Honey optional
  • 1 Tbls Arrowroot Starch
  • Green Onions optional topping
  • Pepper Flakes optional topping
  • Sesame Seeds optional topping

Instructions
 

  • Make the sauce by adding the coconut aminos, chili garlic sauce, rice wine vinegar, honey (if using), minced garlic and fresh ginger to a small bowl. Mix together and then whisk in the arrowroot starch
    Set aside until ready to use
  • Heat 1 tsp of the avocado oil in a large skillet over medium/high heat
    Add in the ground turkey and season with salt
    Cook for about 5-7 minutes (until just cooked through) and then remove from pan
  • Reduce heat to medium and add in the remaining tsp of avocado oil
    Sauté the trimmed and halved green beans for 5 minutes – you want them to get some caramelization on the outside but not to get too soft
  • Add the cooked ground turkey in with the green beans and pour the sauce over top – stir and continue to cook over medium heat until the sauce is thickened and the ground turkey is heated through (about 3-5 minutes)
  • Remove from heat and serve over cauliflower rice or grain of choice
    Top with optional green onion, pepper flakes and sesame seeds
