    Spicy Pork Lettuce Cups - Whole 30 + Low Carb

    These Spicy Pork Lettuce Cups are my healthier take on one of my favorite Asian inspired restaurant dishes. They are super simple to make but have so much flavor. I could truly eat these every night of the week. The dipping sauce adds even more heat and flavor to an already delicious meal, you gotta try it!

    I get my ground pork from ButcherBox (along with almost all of my meat). It is the best quality and gets delivered right to my front door. I love to use pork for this recipe because it reminds me of pork egg roll filing, it is so yummy! But you can feel free to customize this recipe with the ground meat of your choice. Ground turkey or chicken are great options for a lower fat version of this meal.

    I love to use fresh and crisp Bibb lettuce for the 'cups'. It holds up really well and has a lovely, delicate flavor. You can also use romaine lettuce or even cabbage leaves. I have even served the filling over cauliflower rice for a heartier version of this dish.

    In my opinion, the dipping sauce is what really puts these pork lettuce cups over the top. It adds a pop of spice and fresh flavors. I love that it brings together the flavors that are already in the filling. It can get messy, but trust me, it is so worth it!

    Spicy Pork Lettuce Cups

    Ingredients
      

    • 1 Tbls Avocado Oil
    • 1.5 lbs Ground Pork
    • ¼ tsp Crushed Red Pepper Flakes
    • ½ Yellow Onion diced
    • 1 cup Shredded Cabbage green
    • ½ cup Shredded Carrot
    • 3 cloves Garlic minced
    • 1 Tbls Ginger (fresh) minced or grated
    • ¼ cup Coconut Aminos
    • 2 Tbls Rice Wine Vinegar
    • 1 Tbls Toasted Sesame Seeds topping
    • 2 Tbls Green Onions topping
    • 1 Jalapeno sliced; topping
    • Bibb Lettuce for cups

    Dipping Sauce

    • ¾ cup Coconut Aminos
    • 2 Tbls Rice Wine Vinegar
    • 1 Jalapeno diced
    • ¼ tsp Crushed Red Pepper Flakes
    • 1 tsp Garlic grated
    • ½ Tbls Ginger grated
    • 1 tsp Sesame Oil

    Instructions
     

    • Heat avocado oil in a large skillet over medium heat and cook the pork until mostly cooked through
      Add in the onion, cabbage and carrots and sauté for 3 minutes to start to soften the veggies
    • Mix the coconut aminos, rice wine vinegar, ginger, crushed red pepper flakes and garlic together and pour into the meat mixture, cook for another 5 minutes and remove from heat 
      Season to taste
    • Use the Bibb lettuce to make cups and place some of the mixture in each one. Top with sliced jalapeno, sesame seeds and green onions 

    Dipping Sauce

    • Combine all the ingredients in a bowl and serve alongside wraps
