Whole30 Bacon Ranch Potato Salad
This loaded up Whole30 bacon ranch potato salad is about to be your new favorite summer side dish! It has crunch, creaminess, and most importantly, loads of flavor. Enjoy this delicious side dish with any of your favorite summer recipes.
Two of the main components of this recipe are the bacon and eggs. I have my fool proof methods for cooking them perfectly every single time. I bake my bacon in the oven and I cook my eggs in the Instant Pot. Both methods are so easy! My favorite Whole30 compliant bacon to use in this recipe is the uncured smoked bacon from Pederson’s Farms. It is so good and add the perfect amount of smokey flavor!
The sauce for this recipe is a mayo base with some ranch mixed in. I had some fresh herbs to really boost the ranch flavor for the perfect bite. You can use your favorite compliant ranch dressing, but I love to make my own. It is my family’s favorite ranch and we put it on everything!
Bacon Ranch Potato Salad Dressing:
- 1 cup Mayo
- 1/4 cup Ranch Dressing
- 1 tsp Kosher Salt
- 1/4 tsp Pepper
- 2 Tbls Fresh Dill
- 1 Tbls Fresh Parsley
- 1/4 tsp Onion Powder

Whole30 Bacon Ranch Potato Salad
Ingredients
- 5 large Russet Potatoes cubed
- 8 slices Bacon cooked & chopped
- 4 Hardboiled Eggs chopped
- 2 stalks Celery
- 1 cup Mayo
- 1/4 cup Ranch Dressing
- 1 tsp Salt
- 1/4 tsp Pepper
- 2 Tbls Fresh Dill
- 1 Tbls Fresh Parsley
- 1/4 tsp Onion Powder
- 1/2 cup Green Onions chopped
Instructions
- Cube and boil the potatoes until fork tender and drain. Let cool and then add to a large mixing bowlStir in the chopped bacon, celery and hardboiled eggs
- In another mixing bowl, add in the mayo, ranch, dill, parsley, salt, pepper, and onion powder Whisk to combine and pour over the potato mixture, stir to combine
- Stir in the green onions and let cool in the fridge at least 30 minutes before serving Taste for salt and pepper before serving
