Ingredients

  • Italian Chicken Sausage – I use pre-cooked sausage for this to keep it both easy and delicious
  • Orzo – this is a rice shaped pasta and it’s perfect for the creamy texture of this dish
  • Onion
  • Garlic
  • Sun-dried Tomatoes
  • Chicken Broth
  • Artichoke Hearts
  • Heavy Cream
  • Grated Parmesan
  • Fresh Spinach
  • Olive Oil
  • Fresh Basil
  • Salt & Pepper

Let’s Make One Pot Creamy Orzo with Sausage

This is a brief rundown of the recipe, complete measurements and instructions can be found in the recipe card at the end of the post

Step One: heat the olive oil in the pan and brown the Italian chicken sausage
Step Two: add in the onion and garlic and sauté for 5 minutes
Step Three: stir in the orzo, sun-dried tomatoes, and artichoke hearts
Step Four: add salt, pepper and chicken broth
Step Five: bring to a boil then reduce to a simmer and cover – cook for 12-15 minutes until the pasta is cooked and the broth is mostly absorbed
Step Six: remove from the heat and stir in the spinach, parmesan and heavy cream
Step Seven: stir together until combined and creamy, taste for seasoning and then serve with fresh basil on top

Ingredients
  

  • 1 tsp Olive Oil
  • 12 oz Italian Chicken Sausage pre-cooked; sliced
  • 1/2 cup Yellow Onion diced
  • 3 cloves Garlic minced
  • 1/4 cup Sun-dried Tomatoes chopped
  • 1/2 cup Artichoke Hearts quartered
  • 1.5 cups Orzo
  • 1/4 tsp Salt
  • 1/8 tsp Pepper
  • 3 cups Chicken Broth
  • 1/4 cup Heavy Cream*
  • 1/2 cup Grated Parmesan
  • 3 cups Fresh Spinach
  • Fresh Basil optional for topping

Instructions
 

  • Add the olive oil to a large pan and heat to medium
    Add in the sliced, pre-cooked Italian chicken sausage and sauté until evenly browned
  • Next add in the diced onion and minced garlic and cook for an additional 3-5 minutes – until the onion is slightly translucent
  • Once the onion is translucent, stir in the orzo, sun-dried tomatoes, and artichokes
  • Season with salt, pepper and pour in the broth. Bring to a boil and then reduce to a simmer – cover and cook for 12-15 minutes
    Pasta should be just tender but with still a little chew to it. Remove from heat
  • Add in the spinach, grated parmesan and heavy cream – stir until combined
    Taste for seasoning, add additional salt/pepper as needed
    Top with fresh basil and enjoy!

Notes

*You can add more heavy cream if needed for creamier consistency (will affect macros)

    I made this recipe for myself and my husband. It was so delicious and easy, using just one pan. I added some broccoli that needed to be used and it was great! I took a photo, but it doesn’t look like I can upload it here.
