- Orzo – this is a rice shaped pasta and it’s perfect for the creamy texture of this dish

One Pot Creamy Orzo with Sausage
This One Pot Creamy Orzo with Sausage is the perfect weeknight meal that the whole family will love. It comes together quickly and is loaded with Mediterranean inspired flavors.
Ingredients
- 1 tsp Olive Oil
- 12 oz Italian Chicken Sausage pre-cooked; sliced
- 1/2 cup Yellow Onion diced
- 3 cloves Garlic minced
- 1/4 cup Sun-dried Tomatoes chopped
- 1/2 cup Artichoke Hearts quartered
- 1.5 cups Orzo
- 1/4 tsp Salt
- 1/8 tsp Pepper
- 3 cups Chicken Broth
- 1/4 cup Heavy Cream*
- 1/2 cup Grated Parmesan
- 3 cups Fresh Spinach
- Fresh Basil optional for topping
Instructions
- Add the olive oil to a large pan and heat to mediumAdd in the sliced, pre-cooked Italian chicken sausage and sauté until evenly browned

- Next add in the diced onion and minced garlic and cook for an additional 3-5 minutes – until the onion is slightly translucent

- Once the onion is translucent, stir in the orzo, sun-dried tomatoes, and artichokes

- Season with salt, pepper and pour in the broth. Bring to a boil and then reduce to a simmer – cover and cook for 12-15 minutes Pasta should be just tender but with still a little chew to it. Remove from heat

- Add in the spinach, grated parmesan and heavy cream – stir until combinedTaste for seasoning, add additional salt/pepper as neededTop with fresh basil and enjoy!

*You can add more heavy cream if needed for creamier consistency (will affect macros)
