Ingredients
1tspOlive Oil
12ozItalian Chicken Sausagepre-cooked; sliced
1/2cupYellow Oniondiced
3clovesGarlicminced
1/4cupSun-dried Tomatoeschopped
1/2cupArtichoke Heartsquartered
1.5cupsOrzo
1/4tspSalt
1/8tsp Pepper
3cupsChicken Broth
1/4cupHeavy Cream*
1/2cupGrated Parmesan
3cupsFresh Spinach

Instructions
Add the olive oil to a large pan and heat to mediumAdd in the sliced, pre-cooked Italian chicken sausage and sauté until evenly browned
Next add in the diced onion and minced garlic and cook for an additional 3-5 minutes - until the onion is slightly translucent
Once the onion is translucent, stir in the orzo, sun-dried tomatoes, and artichokes
Season with salt, pepper and pour in the broth. Bring to a boil and then reduce to a simmer - cover and cook for 12-15 minutes Pasta should be just tender but with still a little chew to it. Remove from heat
Add in the spinach, grated parmesan and heavy cream - stir until combinedTaste for seasoning, add additional salt/pepper as neededTop with fresh basil and enjoy!
