This One Pot Creamy Orzo with Sausage is the perfect weeknight meal that the whole family will love. It comes together quickly and is loaded with Mediterranean inspired flavors.

Ingredients

  • 1 tsp Olive Oil
  • 12 oz Italian Chicken Sausage pre-cooked; sliced
  • 1/2 cup Yellow Onion diced
  • 3 cloves Garlic minced
  • 1/4 cup Sun-dried Tomatoes chopped
  • 1/2 cup Artichoke Hearts quartered
  • 1.5 cups Orzo
  • 1/4 tsp Salt
  • 1/8 tsp Pepper
  • 3 cups Chicken Broth
  • 1/4 cup Heavy Cream*
  • 1/2 cup Grated Parmesan
  • 3 cups Fresh Spinach
  • Fresh Basil optional for topping

Instructions

  • Add the olive oil to a large pan and heat to medium
    Add in the sliced, pre-cooked Italian chicken sausage and sauté until evenly browned
  • Next add in the diced onion and minced garlic and cook for an additional 3-5 minutes - until the onion is slightly translucent
  • Once the onion is translucent, stir in the orzo, sun-dried tomatoes, and artichokes
  • Season with salt, pepper and pour in the broth. Bring to a boil and then reduce to a simmer - cover and cook for 12-15 minutes
    Pasta should be just tender but with still a little chew to it. Remove from heat
  • Add in the spinach, grated parmesan and heavy cream - stir until combined
    Taste for seasoning, add additional salt/pepper as needed
    Top with fresh basil and enjoy!

Notes

*You can add more heavy cream if needed for creamier consistency (will affect macros)
