Instant Pot Sloppy Joe Stuffed Sweet Potatoes
These Instant Pot Sloppy Joe Stuffed Sweet Potatoes have quickly become a weekly staple in our home. They are a healthy, delicious and family-friendly meal that take no time at all thanks to the IP! This paleo and Whole30 dinner is sure to be a hit in your home too.
The first step in this recipe is to brown the meat in the IP on saute mode. Then you simply add the rest of the ingredients to the Instant Pot and cook! So simple, but so full of those childhood flavors that you remember and love. If you want this to be a quick weeknight meal, you can prep the sweet potatoes ahead of time (this is what I do).
To keep this Whole30 compliant, I use my favorite unsweetened ketchup from Tessemae’s. It has a true ketchup flavor and work perfectly in this recipe. I have found mine at Walmart and online at Thrive Market. To add just a little sweetness (like traditional sloppy joes) I add in a few finely chopped dates. They soften up and melt right into the sauce while cooking. Once the sauce is done cooking, let it cool for a minute and then load it on those sweet potatoes!

Instant Pot Sloppy Joe Stuffed Sweet Potatoes
Ingredients
Sloppy Joes
- 1 Tbls Avocado Oil
- 1 lb Ground Beef
- 1 cup Unsweetened Ketchup I use Tessemaes
- 1 cup Yellow Onion diced
- 1 Red Bell Pepper seeded & diced
- 1 Green Bell Pepper seeded & diced
- 2 cloves Garlic
- 2 Pitted Dates diced
- 1 Tbls Mustard
- 1/4 cup Coconut Aminos
- 1 tsp Salt
Sweet Potatoes
- 4 Sweet Potatoes
- 1 Tbls Avocado Oil
Instructions
Sweet Potatoes
- Preheat oven to 425' and line a baking sheet with parchment paper. Wash the sweet potatoes and prick with a fork 3 times (in different spots) brush the outside with avocado oil and sprinkle with salt Bake for 40-50 minutes or until just fork tender Remove from oven and let cool, then split open with a knife, sprinkle with a little salt and pepper and stuff with sloppy joe mix (when it's done)
Slopppy Joes
- Turn Instant Pot to saute mode and add in the oil. Once it is hot, add in the ground beef. Saute until mostly cooked through and add in the onions, peppers, and garlic. Saute another 2 minutesThen add in the remaining ingredients. Stir to combine and turn to high pressure and set time for 10 minutesWhen timer goes off, do a quick release of the steam. Let mixture cool for 5 minutes and stuff into the baked sweet potatoes
