What You Need:

  • Shredded Chicken – I always buy an organic rotisserie chicken, but you can make your own too
  • Mayo – I like Primal Kitchen for a Whole30 compliant option
  • Celery
  • Green Onion
  • Slivered Almonds
  • Lemon
  • Chicken Broth
  • Salt & Pepper

Let’s Make Chicken Salad:

  1. In a large bowl, combine the mayo, chicken broth, lemon juice, salt and pepper. Use whisk to mix together
  2. Add in the remaing ingredients and mix together
  3. Taste it and add more salt and pepper if needed. Can also add more mayo or broth (1 Tbls at a time) if you want it creamier

How to Serve it:

I love to eat it right out of the bowl, but it is also amazing over fresh greens or in a lettuce wrap! Another one of my favorite ways to eat this on an Outer Aisle cauliflower thin, they are not Whole30 compliant but are Keto friendly and delicious! Use code TBB for 10% off

This sounds wonderful and I am going to give it a go this weekend! I love to cook and love a good chicken salad but have always steered away from making my own. This has changed my mind. I do low carb and watch calories so chicken is great. I love the rotisserie chicken idea! The only thing I see wrong is the nutritional value break down. There is zero chance that there is only 1g of protein. The main ingredient is chicken, that is all protein lol.

Awesome recipe. The combination of flavors was delicious. I treasure that @thebetteredblondie takes the time to come up with delicious recipes that are low carb but don’t sacrifice taste.

So so good! Can’t believe I kept putting off making this. So simple and satisfying… I used the Primal Kitchen mayo which I was skeptical about but I cannot tell the difference between this and any other chicken salad I’ve had before. Pair it with a romaine lettuce leaf and some carrots and you’re good to go! I’m a nurse so a quick, healthy, easy lunch is essential for me and this one knocked it out of the park!

I am so glad you liked it Megan. I used to pull 16 hour shifts as a nurse, I know how important meal prep is! So happy it worked out for you 🙂

    2. Same here Sara. I’ve been saying I’m going to make chicken salad for the past year and haven’t gotten around to making some. I found this recipe and thinking about giving it a try this week and save a few bucks.

Absolutely delicious! So easy to make especially in the instant pot, it’s good because the chicken doesn’t get dried out. Pair it with some homemade Whole30 mayo and some almond slivers for a little crunch. An absolute staple in my house for lunches!
