This Whole30 + Keto Shredded Chicken Salad is a delicious copycat of your favorite Costco chicken salad. It is so simple and perfect for your healthy meal prep. You are sure to love this yummy, protein packed meal!

What You Need:
- Shredded Chicken – I always buy an organic rotisserie chicken, but you can make your own too
- Mayo – I like Primal Kitchen for a Whole30 compliant option
- Celery
- Green Onion
- Slivered Almonds
- Lemon
- Chicken Broth
- Salt & Pepper

Let’s Make Chicken Salad:
- In a large bowl, combine the mayo, chicken broth, lemon juice, salt and pepper. Use whisk to mix together
- Add in the remaing ingredients and mix together
- Taste it and add more salt and pepper if needed. Can also add more mayo or broth (1 Tbls at a time) if you want it creamier

How to Serve it:

I love this recipe! Chicken salad is something I crave often and it’s so easy & yummy to pack for lunch on a busy work day!
Absolutely delicious! So easy to make especially in the instant pot, it’s good because the chicken doesn’t get dried out. Pair it with some homemade Whole30 mayo and some almond slivers for a little crunch. An absolute staple in my house for lunches!

So so good! Can’t believe I kept putting off making this. So simple and satisfying… I used the Primal Kitchen mayo which I was skeptical about but I cannot tell the difference between this and any other chicken salad I’ve had before. Pair it with a romaine lettuce leaf and some carrots and you’re good to go! I’m a nurse so a quick, healthy, easy lunch is essential for me and this one knocked it out of the park!

Same here Sara. I’ve been saying I’m going to make chicken salad for the past year and haven’t gotten around to making some. I found this recipe and thinking about giving it a try this week and save a few bucks.
