Easy & Healthy Egg Salad – Paleo, Keto, Whole30

This easy and healthy egg salad is so simple but is packed with delicious, fresh flavors. Perfect hardboiled eggs, fresh herbs and seasonings make this egg salad the perfect lunch.

What You Need:

  • Hardboiled Eggs
  • Mayo (to keep it Whole30, make sure to get a compliant mayo. Primal Kitchen is my personal favorite)
  • Red Onion
  • Fresh Dill
  • Fresh Chives
  • Dijon Mustard (also read labels to make sure its Whole30)
  • Salt & Pepper

Let’s Make Egg Salad:

  1. Add the chopped hardboiled eggs and remaining ingredients to a large bowl and mix to combine
  2. Taste and add seasoning as needed
  3. Serve over lettuce or as a sandwich, enjoy!

Recipe Tips:

  • Make your hard boiled eggs in the Instant Pot – it is quick and they are so easy to peel!
  • Change it up by adding your favorite fresh herbs
  • You can leave the eggs in a larger cube or fine dice depending on your preferences
  • Use plain greek yogurt in place of mayo for a lower fat and high protein option

How to Serve Your Egg Salad:

  • To keep this salad Paleo, Keto and Whole30, I serve it over fresh greens. Any greens will work, but I LOVE the crispness and light flavor of butter lettuce. It can be used as a little cup or wrap.

Ingredients
  

  • 8 Hard Boiled Eggs chopped
  • 1/4 cup Mayo
  • 1 Tbls Dijon Mustard
  • 2 Tbls Red Onion diced
  • 1 Tbls Fresh Chives chopped
  • 1 Tbls Fresh Dill chopped
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
