Easy & Healthy Egg Salad – Paleo, Keto, Whole30

This easy and healthy egg salad is so simple but is packed with delicious, fresh flavors. Perfect hardboiled eggs, fresh herbs and seasonings make this egg salad the perfect lunch.

I recently started do my hard boiled eggs in the Instant Pot and they come out perfectly every single time. Check out my post about how I do it HERE. I love how easy it is, I usually make enough eggs for this recipe and then extra to have on hand for snacks throughout the week.

I think traditional egg salad can be a little boring, so I like to add fresh herbs to kick up the flavor. Dill and chives are my favorite for egg salad, they add a lovely light and fresh flavor. The diced red onion adds both flavor and texture. You can add in your favorite herbs to switch it up.

What You Need:

  • Hardboiled Eggs
  • Mayo (to keep it Whole30, make sure to get a compliant mayo. Primal Kitchen is my personal favorite)
  • Red Onion
  • Fresh Dill
  • Fresh Chives
  • Dijon Mustard (also read labels to make sure its Whole30)
  • Salt & Pepper

To make this recipe you first need to have hardboiled eggs. I use my Instant Pot for this, but you can use your preferred method. I chop my eggs fairly small for my egg salad, but you can keep them chunkier if you like.

After that it is really as simple as combining all the ingredients together in a bowl. Mayo and mustard are the base of the ‘sauce’ and the fresh herbs and diced red onion add so much flavor. You can add different herbs or throw in some celery or other veggies to change up the favor and texture of the egg salad.

How to Serve Your Egg Salad:

To keep this salad Paleo, Keto and Whole30, I serve it over fresh greens. Any greens will work, but I LOVE the crispness and light flavor of butter lettuce. It can be used as a little cup or wrap.

You can also enjoy this egg salad as a sandwich. My daughter loves it on her favorite gluten free toast and I love to enjoy it on a buttery croissant. A keto sandwich option would be to use cauliflower thins!

Ingredients

  • 8 Hard Boiled Eggs chopped
  • 1/4 cup Mayo
  • 1 Tbls Dijon Mustard
  • 2 Tbls Red Onion diced
  • 1 Tbls Fresh Chives chopped
  • 1 Tbls Fresh Dill chopped
  • 1/4 tsp Salt
  • 1/4 tsp Pepper

Instructions

  • Add the chopped hardboiled eggs and remaining ingredients to a large bowl and mix to combine
    Taste and add seasoning as needed
  • Can stay fresh in the fridge for 3-5 days in an airtight container
