Whole30 Spiced Steak Salad

This spiced steak salad will change how you view salads forever. The spice mixture on the steak is loaded with flavor and pairs perfectly with the refreshing coleslaw. My absolute favorite way to top this salad is with my easy mango salsa. It is a healthy and delicious meal that is sure to be your new favorite way to eat a salad.

The easy mango salsa is good enough to eat with a spoon and I love to make extra so I can put it on everything. It’s only 5 ingredients and is so easy to make. I like to think of it as the ‘dressing’ for this salad. Just like with every fresh salsa that I make, I like to do it ahead of time so that the flavors have a chance to get fully combine.

 I love making my own dry rubs because it is so easy to do and saves money. You also don’t get any extra weird additives when you do it yourself. This spice combination for this spiced steak salad is a blend of some of my favorite flavors. It pairs perfectly with the refreshing coleslaw and mango salsa.

I love skirt steak because it is a relatively inexpensive cut of meat that tastes delicious. I love to buy the two pack at Sam’s Club and make a double batch because my family loves it so much. I have also used flank steak which is also amazing, just be sure to adjust the cooking times because it is usually a thicker cut.

The biggest tips that I have when you are cooking steak is to

1.) LET IT REST

2.) Slice it against the natural grain

These to steps help keep the steak both tender and juicy. I always let my steak rest for at least 10 minutes before slicing.

Ingredients
  

Spice Rub

  • 1 Skirt Steak or flank steak
  • 1 Tbls Ancho Chili Powder can also use regular chili powder
  • 1 tsp Sea Salt
  • 1 tsp Cumin
  • 1 tsp Garlic Powder
  • 1/2 tsp Cayenne Pepper
  • 1/2 tsp Onion Powder
  • 1/2 tsp Dried Coriander
  • 2 Tbls Avocado Oil

Slaw

  • 2 cups Cabbage Slaw
  • 1/4 cup Cilantro chopped
  • 1/4 cup Mayo
  • 1 tsp Hot Sauce
  • 1 tsp White Vinegar

Instructions
 

Cabbage Slaw

  • Combine the slaw mix, mayo, hot sauce, vinegar and a pinch of salt in a bowl and let sit in the fridge while you cook the steak

Spiced Steak

  • Place steak on a cutting board and trim any excess fat. Mix the seasonings in a small bowl and then completely coat the steak with the mixture
  • Heat the oil in a large skillet over medium/high heat. Once the skillet is nice and hot, cook the steak on both sides for 3-5 minutes (or to preferred doneness)
  • Once the steak is done, let it rest for at least 10 minutes, then slice against the grain
    To assemble the bowls, layer slaw on the bottom, then steak
    Add additional topping of choice (radishes, jalapeno, cilantro, avocado, lime etc)
