Healthy Mother’s Day Brunch + Giveaway
*This post is sponsored by Mann’s Fresh Vegetables. All thoughts and opinions are my own.
When I think of Mother’s Day, I think of brunch. I love making healthy and delicious food to celebrate the special people in my life. But I don’t love spending the whole day stressed out in the kitchen. One thing I learned from one of my faves, Ina Garten, is that you can make beautiful meals with a combination of both fresh and prepared foods.
I have been using Mann’s products for a long time now, they are my go-to for fresh veggies. The BROCCOLINI® baby broccoli will always be my absolute favorite. It has such a sweet and delicate flavor when roasted. Wrap it in prosciutto and you can’t go wrong! I served it on a beautiful platter with sot-boiled eggs. You can cook the eggs to your preference. Poached eggs take a little more time, but would be a lovely way to top the BROCCOLINI® baby broccoli.
Serve the fresh and crunchy snap peas with a side of your favorite dip and in a light and citrusy salad. Crispy green apple, snap peas, fresh mint, arugula and a citrus vinaigrette make the perfect side salad for your Mother’s Day Brunch. You can use the variety of coleslaw and salad mixes to create another fresh option. Use a traditional creamy slaw dressing or your favorite store-bought dressing to bring it all together.

More Brunch Must Haves
- Fresh Fruit
- Coffee & Cream
- Juice
- Whipped Cream for Fruit (we used coconut whipped cream)
- Fresh Flowers
- Baked Goods (we bought fresh scones)
- Sparkling Water, Cocktails or Mocktails
Be sure to involve your kids, they love to help! My daughter is old enough to help with a lot of the prep and she loves being in the kitchen with me. My son is still a toddler, so I let him think he is helping haha. It is a great way to teach them healthy habits and have them try new things. Abby (my daughter) eats the snap peas in her lunch almost every single day.
The best part about all of this is that you get to make it your own. Use these beautiful fresh veggies to get in the kitchen with your loved ones and not only make a lovely brunch, but also the best memories. Food is special. It nourishes both our soul and our bodies. Mann’s Fresh Vegetables makes it easy to enjoy that time with your family and I will forever be a customer.
