Healthy Mother’s Day Brunch + Giveaway

When I think of Mother’s Day, I think of brunch. I love making healthy and delicious food to celebrate the special people in my life. But I don’t love spending the whole day stressed out in the kitchen. One thing I learned from one of my faves, Ina Garten, is that you can make beautiful meals with a combination of both fresh and prepared foods.

I have been using Mann’s products for a long time now, they are my go-to for fresh veggies. The BROCCOLINI® baby broccoli will always be my absolute favorite. It has such a sweet and delicate flavor when roasted. Wrap it in prosciutto and you can’t go wrong! I served it on a beautiful platter with sot-boiled eggs. You can cook the eggs to your preference. Poached eggs take a little more time, but would be a lovely way to top the BROCCOLINI® baby broccoli.

Serve the fresh and crunchy snap peas with a side of your favorite dip and in a light and citrusy salad. Crispy green apple, snap peas, fresh mint, arugula and a citrus vinaigrette make the perfect side salad for your Mother’s Day Brunch. You can use the variety of coleslaw and salad mixes to create another fresh option. Use a traditional creamy slaw dressing or your favorite store-bought dressing to bring it all together.

Be sure to involve your kids, they love to help! My daughter is old enough to help with a lot of the prep and she loves being in the kitchen with me. My son is still a toddler, so I let him think he is helping haha. It is a great way to teach them healthy habits and have them try new things. Abby (my daughter) eats the snap peas in her lunch almost every single day.

Ingredients
  

Prosciutto Wrapped Broccolini

  • 1 bunch Broccolini Mann's
  • 6 slices Prosciutto
  • 4 Eggs soft boiled
  • 1/4 tsp Salt
  • 1/4 tsp Pepper

Snap Pea and Mint Salad

  • 1 cup Snap Peas Mann's
  • 1 cup Arugula
  • 1/4 cup Mint fresh
  • 1 Green Apple thinly sliced
  • 1/4 cup Lemon Juice
  • 1/2 cup Extra Virgen Olive Oil
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Slaw Salad with Candied Pecans

  • 1 bag Cole Slaw Mix Mann's
  • 1 Green Apple
  • 1/2 cup Candied Pecans chopped
  • 1/4 cup Dried Cranberries

Instructions
 

Prosciutto Wrapped Broccolini

  • Preheat the oven to 375' 
    Then wrap the broccolini in prosciutto, sprinkle with salt and pepper and bake for 10-15 minutes
  • Serve over some greens with sliced hard-boiled eggs

Snap Pea and Mint Salad

  • In a large bowl add the arugula, snap peas, mint and sliced apple
  • In a small bowl mix the lemon juice, olive oil, salt and pepper together until well combined and pour over the salad. Toss to combine

Slaw Salad with Candied Pecans

  • Combine all the ingredients in a large bowl and serve with dressing of choice (I used a raspberry vinaigrette and it was lovely)
