Thai Meatball Meal Prep Bowls
I love to have meal prep bowls that are delicious eaten cold or warmed up. These Thai meatball meal prep bowls are perfect and delicious either way! My personal favorite is to toss it all together and eat it as a cold Thai salad. The veggies are so crisp and crunchy, the meatballs are tender and loaded with flavor and the almond sauce is the perfect way to bring it all together.
Another great thing about these on-the-go lunches is that they hardly take any time at all to throw together! The meatballs are super easy to make and they bake in the oven, so you don’t have to stand over the stove. I use a cookie scoop to make sure they are an equal size and it saves so much time. Three simple steps and you have the protein ready for your bowls!
While the meatballs are baking, I make the salad. It is so easy but adds such a crisp and refreshing bite. You can use a mix of your favorite veggies, but I love the bell peppers and carrots together. Cabbage, snap/snow peas or mung bean sprouts would also be great additions. The herbs add a nice fresh flavor and the cashews give that salty, crunchy bite.
To make my life (and yours) easier, I buy Yai’s Thai Almond Sauce for the dressing. It is Paleo and Whole30 compliant and is perfect for this dish. I love to have sauces like this on hand because I don’t want to be spending 6 hours in the kitchen. If you are not doing a Whole 30, you could use your favorite Thai peanut sauce as well.

Thai Meatball Meal Prep Bowls
Ingredients
Meatballs
- 1 lb Ground Chicken
- 2 Tbls Green Onions chopped
- 2 Tbls Cilantro chopped
- 1/2 tsp Salt
- 1/2 tsp Red Pepper Flakes
- 1/4 tsp Ground Ginger
- 1/4 tsp Garlic Powder
Salad
- 1 Red Bell Pepper sliced
- 1 Green Bell Pepper sliced
- 2 Carrots peeled & cut into strips
- 2 Tbls Green Onions chopped
- 2 Tbls Cilantro chopped
- 2 Tbls Cashews chopped
- 6 Tbls Yais Thai Almond Sauce
Instructions
Meatballs
- Preheat oven to 400' and place all of the meatball ingredients into a large bowl. Mix together until combined (with hands) and use cookie scoop to form 12 meatballs
- Place the meatballs on a baking sheet and bake for 20 minutes and then set aside to cool
Salad
- Place all the salad ingredients into a bowl and toss to combine. Separate into 3 glass meal prep containers and then place 4 meatballs in each container
- Pour some almond sauce in a small condiment container and place that in the meal prep container. Close the lids and store in the fridge for 3-4 days
