Italian Chopped Salad
This Italian Chopped Salad is sure to be your new favorite salad. With salami, ham, crunchy cucumber, pepperonchini, and more, you will be making this all summer long! And the dressing is so easy to make but really packs in the flavor.

This dressing is so easy to make. I like to add all of the ingredients to a small mason jar, just shake it up and pour! It takes no time at all and is better for you than most store-bought options.
Easy Italian Dressing:
- Olive Oil (or avocado oil)
- Red Wine Vinegar
- Oregano
- Dijon Mustard
- Garlic
- Salt & Pepper

The dressing is really the only component that you have to make, which is what makes this recipe so simple and delicious! But you can also take the extra step to marinate your onions. I prefer them this way, but thinly sliced raw red onion is perfect too. I don’t have an onion marinade recipe, I always use Teri’s from No Crumbs Left.

Italian Chopped Salad Variations:
- Use different greens as the base
- Switch up the fresh veggies (bell peppers, celery etc)
- Try different toppings (marinated artichokes, olives, mozzarella)
- Add more meats (prosciutto, turkey, pepperoni)
