Ingredients

  • 1.5 cups Gluten Free Oats
  • 1/4 cup Cashew Butter or nut butter of choice
  • 1/4 cup Shredded Coconut Unsweetened
  • 1/2 cup Pumpkin Puree
  • 2 Tbls Honey
  • 1/2 tsp Vanilla Extract
  • 2 tsp Pumpkin Pie Spice
  • 1/4 tsp Salt
  • 1 scoop Vanilla Protein Powder
  • 1/4 cup Chocolate Chips

Instructions

  • Add all of the ingredients except the chocolate chips to a large mixing well and stir to combine completely
  • Add in the chocolate chips and mix again to combine
  • Use a small cookie dough scoop to measure out each bite and roll into balls
    Store in the fridge in an airtight container

Notes

When you are first combining the ingredients, the mixture might seem dry but keep stirring, it will come together
If you don't have a small cookie dough scoop, measure out about 1 Tbls of mixture per bite
