Kielbasa and Cabbage Soup

Ingredients

  • 1 tsp Avocado Oil
  • 1 lb Kielbasa Sausage sliced into rounds
  • 1 Yellow Onion diced
  • 1 Tbls Ghee or butter
  • 4 cups Green Cabbage sliced or shredded
  • 3 cloves Garlic minced
  • 2-3 lbs Yukon Gold Potatoes cubed
  • 4 Carrots peeled & sliced into rounds
  • 1 tsp Salt
  • 1/4 tsp Pepper
  • 1/2 tsp Dried Dill
  • 1/2 tsp Paprika
  • 5 cups Chicken Broth
  • Fresh Dill optional topping

Instructions

  • Heat the avocado oil in a dutch oven or soup pot over medium heat and cooked the kielbasa until evenly browned - then remove from pan
    Discard any excess fat from the pan
  • Melt the ghee in the pot and add in the onion and cabbage and saute for 4-5 minutes
    Add in the garlic, potatoes, carrots and seasonings. Saute another 2-3 minutes
    Stir the kielbasa back in and pour in the chicken broth. Bring to a boil and then reduce to a simmer
    Let cook for 15-20 minutes or until potatoes are fork tender
  • Serve in bowls and enjoy! Top with more dried or fresh dill as desired
