1TblsLemon Juice
1TblsDijon Mustard
1/2tspLemon Zest
2cupsBaby Kale
2cupsArugula
1/4tspSalt
Fresh Cracked Pepper
1/4cupPine Nuts
1/4cupShaved Parmesan
Instructions
Heat a small skillet over low heat and add in the pine nuts. Stir around occasionally until pine nuts are golden brown (about 5 minutes total) and remove from pan
In a large mixing bowl, add the oil, lemon juice, lemon zest, mustard, salt and pepper and whisk to combine Add the greens into the bowl and toss with the dressing
Top the salad with toasted pine nuts and shaved parmesan before serving
