Salisbury Steak Meatballs with Mushroom Gravy

Ingredients

For the Meatballs

  • 1 Tbls Avocado Oil
  • 1 lb Ground Beef 80/20
  • 1/4 cup Onion grated
  • 2 cloves Garlic grated
  • 1 Tbls Mustard
  • 1 Tbls Coconut Aminos
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1/4 tsp Onion Powder
  • 1/4 tsp Garlic Powder

For the Gravy

  • 1 Tbls Ghee
  • 1/2 cup Onion thinly sliced
  • 1 clove Garlic minced
  • 1 pint Mushrooms (button or baby bella) sliced
  • 1 cup Beef Broth
  • 1 Tbls Balsamic Vinegar
  • 1 Tbls Coconut Aminos
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 Tbls Arrowroot Powder

Instructions

For the Meatballs

  • Add all of the meatball ingredients except the oil into a large bowl and mix just until incorporated (don't over-mix)
    Use cookie scoop to scoop mixture into your hand and roll into balls
  • Once all the balls are rolled out, heat the oil in a large skillet over medium/high heat
    Brown the meatballs on all sides and then remove from pan (set aside)

For the Gravy

  • Reduce heat to medium. Melt ghee in the skillet and then add in the mushrooms and onions
    Cook for 5 minutes, stirring occasionally
  • Add in the garlic and cook for another minute then add in the broth, vinegar and coconut aminos
  • In a small cup, mix the arrowroot powder with a splash of room temp water and mix together. Add to the skillet with salt and pepper. Bring liquid to a boil and then reduce to a simmer
  • Add the meatballs back in gently and let simmer for 7-10 minutes, until meatballs are cooked through and gravy has thickened up
    Serve over your favorite mash and enjoy!
