These Salisbury Steak Meatballs are so tender and flavorful and the mushroom gravy makes it so decadent. Enjoy over cauliflower mash for a perfect healthy low carb meal!
Add all of the meatball ingredients except the oil into a large bowl and mix just until incorporated (don't over-mix) Use cookie scoop to scoop mixture into your hand and roll into balls
Once all the balls are rolled out, heat the oil in a large skillet over medium/high heatBrown the meatballs on all sides and then remove from pan (set aside)
For the Gravy
Reduce heat to medium. Melt ghee in the skillet and then add in the mushrooms and onionsCook for 5 minutes, stirring occasionally
Add in the garlic and cook for another minute then add in the broth, vinegar and coconut aminos
In a small cup, mix the arrowroot powder with a splash of room temp water and mix together. Add to the skillet with salt and pepper. Bring liquid to a boil and then reduce to a simmer
Add the meatballs back in gently and let simmer for 7-10 minutes, until meatballs are cooked through and gravy has thickened upServe over your favorite mash and enjoy!
