Brussels Sprouts with Balsamic Bacon and Pine Nuts

Perfectly caramalized brussels sprouts mixed with balsamic bacon and delicious, buttery toasted pine nuts for a wonderful low carb side dish!

Ingredients

  • 1/4 cup Pine Nuts
  • 3 slices Bacon
  • 1 Tbls Balsamic Vinegar
  • 2 cups Brussels Sprouts halved
  • 1 tsp Avocado Oil
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Instructions

  • Heat a medium skillet over low heat and add in the pine nuts, stirring occasionally
    Watch them carefully so they don't burn, just let them lightly toast until a light golden brown color and set them aside (about 1-2 minutes)
  • Increase the heat of the pan to medium, cut your bacon into small pieces and add into the skillet
    Once the bacon is almost cooked through, add in the balsamic vinegar. Let the bacon cook with the vinegar for 2-3 minutes and then remove the bacon from the pan and set aside
  • Add in the oil and then add in the halved or quartered brussels sprouts, season with salt and pepper
    Let them sit in the pan for 1 minute before moving them around in the pan. You don't want them to burn, but they should should get a nice rich color
    Once they are cooked through (about 5-7 minutes), add the bacon and pine nuts back in
    Taste and add more seasoning if needed

  • This recipe is Paleo and Whole30 compliant if you use compliant bacon
  • We love to serve this as a low carb side dish at holiday meals, but I highly suggest doubling it
