  • 8 Eggs large
  • 1/2 cup Whole Milk or milk of choice
  • 1 tsp Salt
  • 1/4 tsp Pepper
  • 1 lb Turkey Bacon
  • 1 cup Spinach chopped
  • 3/4 cup White Cheddar Cheese shredded
  • Avocado Oil Spray

  • Preheat the oven to 350'F and line your muffin tin with silicone liners and spray with avocado oil spray
  • Heat a skillet over medium heat and spray with avocado oil spray
Cut the turkey bacon into bite sized pieces and cook in the skillet until crisped and cooked through, then set aside
  • Add your eggs, milk, salt and pepper to a mixing bowl and whisk until smooth and fully combined
  • Place 1 Tbls of the cooked turkey bacon and 1 Tbls of the shredded cheese in the bottom of each tin along with about 1 Tbls of the chopped spinach
  • Pour the egg mixture into each tin about 3/4 of the way full
  • Add a little more cheese and turkey bacon to the top and bake for 18-20 minutes, until the center is just set
Let cool and enjoy or store in the fridge in an airtight container for up to 5 days

  • I used whole milk for added flavor and creaminess, you can lower the fat content by using a skim milk or your preference. It will still be super yummy!
  • I used turkey bacon but you can use regular bacon or even chopped Canadian bacon
  • The white cheddar has great sharp flavor and creaminess, but feel free to switch it up with your favorite cheese (mozzarella will lower the fat)
  • Make sure to cook these turkey bacon egg bites until just set for the best texture
  • To prevent sticking I love to use these silicone muffin liners
  • Store in an airtight container for up to 5 days
  • Re-heat in the microwave for 45 - 60 seconds
