Sausage, Kale and Potato Soup
A healthy, delicious and comforting soup made in no time at all.
Servings 6 servings
- 1 Tbls Avocado Oil or olive oil/ghee
- 12 oz Kielbasa Sausage sliced
- 1 cup Yellow Onion diced
- 2 cloves Garlic minced
- 2 lbs Red Potatoes cubed
- 2 cups Kale chopped
- 14.5 oz Can of Coconut Milk Full Fat
- 3 cups Chicken Broth
- 1.5 tsp Salt
- 1/4 tsp Crushed Red Pepper Flakes
Turn Instant Pot to 'saute' mode and add in the oilAdd in the sliced sausage and onion and saute for 3 minutes and then hit 'cancel' button Put the rest of the ingredients into the Instant Pot, seal the lid and close the steam valveTurn to 'pressure' mode on high pressure and set time to 10 minutes (do 7 minutes if you want a little more 'bite' to your potatoes) When timer goes off, do a quick release of the steamAdd a little more salt and pepper if needed (to taste) and enjoy!
Heat oil in a soup pot over medium heat. Add in the sausage and onion and cook for 3 minutes. Add in the rest of the ingredients, bring to a boil and reduce to a simmer. Cook until potatoes are tender (about 15 minutes)
Taste soup and add salt and pepper if needed, then serve and enjoy!
