Healthy Paleo Granola - Gluten Free

Ingredients

  • 1 cup Sliced Almonds raw
  • 1 cup Chopped Pecans raw
  • 1 cup Unsweetened Shredded Coconut
  • 1/2 cup Pumpkin Seeds raw
  • 1/4 cup Honey
  • 1 tsp Vanilla Extract
  • 1 Tbls Cinnamon
  • 1/4 tsp Nutmeg
  • 1 tsp Sea Salt
  • 2 Tbls Coconut oil

Instructions

  • Preheat your oven to 300'F and line a large baking sheet with parchment paper or a silicone baking mat
  • Melt the coconut oil in the microwave for 15-20 seconds 
  • Add all of the ingredients to a large mixing bowl and stir with a rubber spatula to combine 
  • Spread the mixture out on the lined baking sheet and bake for 15 minutes, use spatula to toss the mixture
    Bake another 12-15 minutes. It should be golden brown. (ovens can vary in temp, so keep an eye on it to prevent burning)
  • Remove from oven and let mixture cool to harden. Break into chunks and store in an airtight container
