Ingredients

For the Steak

  • 1 Tbls Avocado Oil
  • 1 Flank Steak or skirt steak (1.5lbs)
  • 2 Tbls Chili Powder
  • 2 tsp Salt
  • 1 tsp Cumin
  • 1 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/4 tsp Coriander
  • 1 Green Bell Pepper sliced
  • 1 Red Bell Pepper sliced
  • 1/2 Jalapeno sliced
  • 1/2 cup Red Onion diced
  • 3 cloves Garlic minced
  • 1/2 cup Beef Broth
  • 2 Tbls Tomato Paste

For the Guacamole

  • 3 Avocados ripe
  • 1/2 Jalapeno diced
  • 1/2 cup Red Onion diced
  • 1/4 cup Cilantro chopped
  • 2 Limes juiced
  • 2 Roma Tomatoes seeded and diced
  • 1 clove Garlic minced
  • 1 tsp Salt

Instructions

For the Steak

  • Slice the steak into thin strips and add to a large bowl, then toss with the seasonings
  • Turn Instant Pot to saute mode and add the oil. Brown the steak for 2 minutes and then hit cancel. Add in the rest of the steak ingredients (bell peppers, jalaepeno, red onion, garlic, beef broth and tomato paste) stir to combine. Secure the lid and seal the steam valve. Set to high pressure cook for 10 minutes
  • Once timer goes off, carefully release the steam. Serve the steak and veggies over cauliflower rice or lettuce and add toppings

For the Guacamole

  • Cut the avocados in half and remove the pit, then scoop out the peel and add to a mixing bowl. Squeeze lime juice over it and add salt, then use fork or masher to mash the avocados.
  • Add in the remaining ingredients and stir to combine. Add more salt to taste (if needed)
