Ingredients

  • 1 Tbls Ghee or oil of choice
  • 1 Sweet Potato peeled and diced
  • 1 Green Apple diced
  • 1/4 cup Onion diced
  • 2 cups Spinach fresh
  • 4 links Chicken Apple Sausage sliced
  • 1/2 tsp Sea Salt
  • 1 Lemon

Instructions

  • Heat a large cast iron skillet over medium heat and add the ghee (or oil)
  • Add in the onion and sweet potato, cook until the onions are translucent and the potatoes become tender (about 5-7 minutes)
  • Add in the chicken sausage and cook another 5 minutes, stirring occasionally
  • Add in the apple and the spinach and cook until the spinach is just wilted
  • Squeeze half the lemon over the dish and season with salt
