Ingredients

  • 1 Tbls Avocado Oil
  • 2 cups Cauliflower Rice
  • 1/4 cup Green Onions chopped
  • 1/2 cup Cilantro chopped
  • 2 Limes
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper

Instructions

  • Zest one lime and juice both limes (set zest and juice* aside)
  • Heat oil in a skillet over medium heat and add in the green onions, cook for 2 minutes, until just fragrant
  • Add in the cauliflower rice and cook for another 10-12 minutes until soft and fluffy. Remove from heat
  • Stir in the cilantro, lime zest & juice* and season with salt and pepper

Notes

*Start with the juice of one lime and taste, then add the rest to taste or serve in wedges alongside the meal
