Low Carb Turkey Salad with Chipotle Lime Ranch

This Turkey Taco Salad is so easy to put together but has so much flavor and texture. It is a recipe that I reach for often during the busy weeknights.

Ingredients

  • 1 lb Ground Turkey
  • 4 cups Chopped Romaine Lettuce
  • 1/2 cup Ranch
  • 2 Tbls Chipotles in Adobo finely chopped
  • 1 tsp Lime Zest
  • 1.3 oz Taco Seasoning about 2.5 Tbls
  • 3 Tbls Tomato Paste
  • 3 Tbls Water
  • 1/4 cup Shredded Cheese
  • 1/4 cup Red Onion diced
  • 1 Avocado cubed
  • 1 Tomato diced
  • 2 Tbls Cilantro chopped
  • Low Carb Chips I use Quest

Instructions

  • Add the ranch, chipotles in adobo and lime zest to a small bowl and mix to combine. Cover and set in the fridge.
  • Heat the oil in a cast iron skillet over medium/high heat and add in the ground turkey. Season with the taco seasoning and tomato paste, stir and let cook until mostly done (about 5-7 minutes)
    Add in the water, stir and let finish cooking. About 5-7 more minutes
    Remove from the heat and set aside
  • Chop the romaine lettuce into bite sizes pieces and top with the cooked ground turkey mixture
    Add the remaining toppings and drizzle on the dressing

Low Carb Chips - I use the Taco flavor from Quest Nutrition
Dressing - if you don't like heat, use your favorite salsa in place of the chipotles
