Whole30 + Keto Herb Roasted Chicken

This Whole Roasted Chicken is tender and juicy on the inside with perfectly crispy skin on the outside. It is so simple but has so much flavor.

Ingredients

  • 1 4-5 lb Whole Chicken
  • ½ cup Butter* softened
  • 4 cloves Garlic minced
  • 1 tsp Fresh Sage
  • 1 tsp Fresh Thyme
  • 1 tsp Fresh Rosemary
  • 1 tsp Lemon Zest
  • 1 Lemon cut into wedges
  • Salt and Pepper

Instructions

  • Preheat the oven to 425' Use paper towels to pat your chicken dry
  • Add softened butter to a small mixing bowl, along with the fresh herbs, lemon zest and minced garlic. Mix to combine and use hands to rub the mixture all over the chicken
    Season liberally with salt and pepper and place the chicken and lemon wedges in a dutch oven or oven safe dish (no need to cover)
    Bake for about an hour and a half (or until internal temp reads 165' in thickest part of the chicken)
    Uses juices from the pan to baste the chicken halfway through
  • Once done, remove from the oven and let rest for about 20 minutes before carving
