  • 1 Head of Romaine Lettuce large or 2 romaine hearts
  • 1 Cucumber chopped
  • 1 Pint Cherry Tomatoes
  • 1/2 Red Onion thinly sliced
  • 1 cup Cubed Ham
  • 1 cup Genoa Salami chopped
  • 1/4 cup Pepperonchinis sliced


  • 1/2 cup Olive Oil or avocado oil
  • 2 Tbls Red Wine Vinegar
  • 1 Tbls Dijon Mustard
  • 1 Tbls Oregano
  • 1 clove Garlic minced
  • 1/2 tsp Salt
  • Fresh Cracked Black Pepper


  • Wash and dry your romaine lettuce and chop. Add it as the base in a large salad bowl then add in the remaining salad ingredients (chopped cucumber, cherry tomatoes, thinly sliced red onion, sliced pepperonchini, and meats)
  • Add all of the dressing ingredients to a small mason jar, secure lid and shake to combine (can also whisk in a bowl)
    Then pour all over the salad and toss to combine
    Enjoy right away - if saving for later, keep the salad and dressing separate until ready to eat


Italian Chopped Salad Variations:
  • Use different greens as the base
  • Switch up the fresh veggies (bell peppers, celery etc)
  • Try different toppings (marinated artichokes, olives, mozzarella)
  • Add more meats (prosciutto, turkey, pepperoni)
