What I Eat in a Day – Week Two

Since I have shared that I am continuing on my 100 pound weight loss journey, many of you wanted to know what I eat. So I am showing what a full day of meals looks like for me right now. I am feeling amazing since I started and I hope this will motivate you to find what works for you.

What I Eat in a Day for Weight Loss:

Coffee – 6:30 am I drink coffee every morning and I keep it very simple right now. I either use regular brewed coffee or my Nespresso and then I add some frothed Nutpods creamer on top. Nutpods is the only creamer I use, it is delicious and fits into almost any lifestyle (dairy free, Whole30, Paleo, keto)

Meal One – 11 am I was struggling a little bit this week, so I kept things very simple. I made this broccoli and chicken apple sausage in the air fryer (I love my air fryer). The broccoli was seasoned with sea salt and pepper flakes.

Snack – 1 pm – This is one of my current favorite snacks right now. I used plain non-fat greek yogurt and mixed in a sprinkle of stevia and cinnamon. Then I topped with fresh berries, so yummy! And the yogurt has a good amount of protein to help keep me full.

Snack Two – 3 pm Today I had homemade Tzatziki with sweet peppers and flax seed crackers. I like Mary’s Gone Crackers brand, they are super crunchy and full of flavor. They went really well with the dip.

Meal Two – 5 pm – Again, keeping it really simple for this meal. I did my Crispy Air Fryer Brussels Sprouts and a perfectly cooked ribeye steak. So good!

Dessert – 6-7 pm This is the same as last week. I pretty much always do berries and tea or a sparkling water. Some days I don’t eat anything after dinner. I am trying to respect my body when it is full.

Like I mentioned earlier, this week was a tough one for me. I felt moody and tired. My youngest son (4 months) had multiple nights of not sleeping well, which means I didn’t sleep either. Normally, that is when I just order something for dinner because I don’t feel like cooking. I didn’t do that and I am proud of myself for pushing through. I am down another 3.3 pounds for a total of 14 pounds this month! Some weeks are going to be harder than others, but we just have to keep moving forward.
