What I Eat in a Day – Week 4

Since I have shared that I am continuing on my 100 pound weight loss journey, many of you wanted to know what I eat. So I am showing what a full day of meals looks like for me right now. I am feeling amazing since I started and I hope this will motivate you to find what works for you.

What I Eat in a Day for Weight Loss:

Coffee – 6:30 am I drink coffee every morning and I keep it very simple right now. I either use regular brewed coffee or my Nespresso and then I add some frothed Nutpods creamer on top. Nutpods is the only creamer I use, it is delicious and fits into almost any lifestyle (dairy free, Whole30, Paleo, keto) 

Meal One – 11 am Oh man, this plate was so yummy! I made a super simple tuna salad and had Simple Mills crackers, cucumbers and tomatoes on the side. This is what I put in my tuna salad to keep it low fat and high protein….

  • 1 Can of Tuna
  • 1 Tbls plain non-fat Greek Yogurt
  • 1 diced Celery Stalk
  • 2 Tbls Red Onion
  • Sea Salt & Pepper to taste

Snack – 1 pm I made Instant Pot Hard Boiled Eggs and topped them with Everything Bagel seasoning. It was soooooo good! I did not eat that whole plate BTW, I shared with my daughter and husband 🙂

Snack Two – 3 pm I had an apple and a Jalapeño Chomps. I let myself have one Chomps stick a day and I look forward to it so much. I keep almost all the flavors on hand because they are so good and they help keep me full. More reasons I love Chomps….

Meal Two – 5 pm I was alone with the baby this evening so I wanted to make a super simple dinner. The Air Fryer has been helping me so much with quick and easy meals. I did a frozen turkey burger in the Air Fryer and then added zucchini and radishes that I had prepped ahead of time. This meal was done in 20 minutes and I barely did any work.

Dessert – 6-7 pm Mixed berries with Greek Yogurt. I mixed with stevia and cinnamon.

This was my lowest week for weight loss, but I still lost 2 lbs. So I am down a total of 19.2 lbs total. I was really hoping to get to 20 lbs lost this week, but that’s okay. I am still so happy to be moving in the right direction. I haven’t eaten out for over 30 days now and that has felt so good. There have been so many improvements in my overall health – better sleep, clothes fitting better, more energy etc. I still have hard moments (like seeing the kids Easter candy in the pantry), but I am working towards being consistent even when I don’t feel motivated.
