My husband grew up in Poland, and I was lucky enough to be able to go there with him a few years back. It was amazing to get to know this whole other side of him! I hardly ever hear him speak in Polish, so it was crazy to hear him speaking it fluently. Anyway, I loved every single bite of food that we had. One of the first dishes we tried had this beautiful mushroom cream sauce, and I fell in love. I just had to try to recreate it.
The sauce that I made came dangerously close to the one we had. It is so rich and creamy, but without the dairy! A lot of recipes like this call for a thickening agent, like arrowroot (which is Whole 30 compliant) but I prefer to take the time to let the sauce reduce and thicken on it’s own.
It is definitely a rich and comforting dish, which we all need every once in a while. I loved Poland and will cherish the time that I had there. This dish brought me back to those beautiful memories, I love how food can do that. I don’t believe that food is either just for nourishment or just for enjoyment, it can be both.
I wrote that this serves two people because it has two pork chops, but they were huge and my daughter and I split one. We do that a lot to save money and because I don’t need to eat that big of a portion.
