I love brussel sprouts, I could eat this entire pan by myself! BUT, if you don’t like brussel sprouts, you should try this recipe. It will make you a believer. When we are making a weeknight meal, it can be easy to forget about the side dishes. I really don’t think any person wants to eat a bag of steamed veggies. These roasted brussel sprouts are so easy and with a few simple ingredients, they really stand out! It’s time to love your veggies as much as the main dish.
My favorite ingredient in this dish (besides the bacon duh) is the pine nuts. When you toast them, they are so crunchy, buttery and delicious. To toast them, just place them in a dry saute pan over medium/low heat. Make sure to stir them, so they don’t burn. You are looking for a nice golden brown color. The reason you can place them in a dry pan is because they have enough natural oils in them.
