I always think of my mother in law when I make this dish. I had never even heard of curry chicken salad until my husband mentioned it one day. She made it with rice and pineapple which is delicious but for Whole 30, I leave the rice out. I have made it twice in the last two weeks, the first time I used pecans and the second time I used cashews. That is what I love about recipes like this, you can make it your own.
I love making a big batch of this for the week, it makes lunches so simple, yet so yummy. I serve it over greens or make a collard wrap out of it. Or I eat it straight out of the container with a fork 🙂 It’s just a fun way to change up the flavors of a favorite dish. But I also love my Easy Chicken Salad recipe.
